Every two or three months, I make a big bulk shopping trip at our local Costco, and chicken thighs are always on the list. I am constantly searching for new ways to liven up this dinner table staple, and am in love with this unexpected combo of Honey Mustard Chicken Thighs and Basil. I put them together as a fluke, because basil was the only fresh herb I had at the time, and it works together beautifully in this Honey Mustard Basil Chicken.
This is a fantastic weeknight dinner recipe for busy families on the go.
The Honey Mustard Chicken Thighs recipe requires little prep time - just chopping the garlic and onions and seasoning the chicken thighs - and then comes together fairly quickly.
You start by cooking the ingredients together in an oven-safe skillet on the stove, and then cover and move it to finish in the oven.
You can also substitute almost any other of your favorite herb(s) if you don't like basil.
While it's in the oven, you can make your side dishes. I serve this with rice, but it would be just as good with quinoa, scalloped potatoes, or polenta.
I'm so excited to have this new addition to our "break out of boring" chicken dinner repertoire. I've made it a few times now, and each time it is gobbled up. The stone ground mustard combined with honey mustard is divine, and the hint of basil gives the flavor a little pep and brightens up the dish even more.

- Preheat oven to 375 degrees.
- In a medium bowl, combine the stone ground mustard, dijon mustard, honey, and 1 tablespoon of olive oil.
- Add remaining tablespoon of olive oil to a large, oven-safe skillet or saute pan over medium heat.
- Add onions and saute for about 3 minutes, until the onions are soft and almost translucent. Add garlic and saute for 1-2 additional minutes.
- Add chicken to the pan and brown the chicken on all sides for about 2-3 minutes.
- Turn chicken so the skin side is up, then pour the mustard mixture over the chicken to coat well.
- Sprinkle basil leaves on and around the chicken.
- Cover chicken with foil and bake at 375 degrees for 40-50 minutes, until the chicken is fully cooked through. Halfway through, baste chicken with the mustard sauce.

This sounds totally delicious and perfectly simple. I do a paleo honey mustard chicken drumstick recipe in the slow cooker sometimes but I'd like to vary it up a little. This one would be perfect in the dutch oven!!
