Recently, Alain and I spent a week in Cabo San Lucas, Mexico. During that time, we tasted our way through some of the best tacos in Cabo San Lucas, devouring at least 20 tacos each!

I came back from that trip totally inspired to recreate my favorite tacos – shrimp tacos – and wanted to make them even faster and easier in the air fryer.

This Air Fryer Shrimp Taco recipe is super simple, and I’ve got some tips to make them even easier down below. So perfect for Taco Tuesday nights or any busy weekend.

Here are a few notes about the base ingredients for these air fryer shrimp tacos.

  • Shrimp – Use medium or large shrimp. You can use frozen shrimp; just be sure to thaw completely and pat dry before using.
  • Seasonings – This recipe uses garlic powder and onion powder vs. fresh garlic onions, since the fresh versions can burn in the air fryer. It also includes chopped cilantro, dried oregano, paprika, cumin, and chili powder, which you can all customize amounts to suit your taste preference. And of course, don’t forget to salt and pepper according to taste.
  • Tortillas – Traditional Baja tacos always use soft corn tortillas, but you can use flour tortillas. We use street taco size tortillas.
  • Toppings – This recipe includes ingredients and instructions to make a quick mango salsa/mango relish to top the tacos, along with shredded cabbage. You can leave these out or substitute with your own favorites!

Optional toppings: chopped cilantro, chopped parsley, sour cream, salsa, salsa verde, avocado cilantro lime crema, shredded cheese.

Step-by-step instructions

Here are some step-by-step photos to help you make these shrimp tacos in the air fryer. You’ll find the full list of ingredients along with measurements, and more detailed instructions in the printable recipe card at the bottom of this post.

  • Season the shrimp.
  • Line your air fryer basket with parchment paper.
  • Place the seasoned shrimp on top of the parchment paper.
  • Air fry shrimp at 400°F for 7-8 minutes. Do not overcook!
  • While shrimp is cooking, make the mango salsa/mango relish.
  • Toast or pan-fry the tortillas to your liking.
  • Add a base layer of shredded cabbage or lettuce to each taco shell.
  • Remove the shrimp from the air fryer when cooked.
  • Add the shrimp to each taco shell.
  • Top with mango salsa/relish and any other optional toppings you want!

Recipe FAQs

Are these air fryer shrimp tacos spicy?

The recipe makes a mild shrimp taco seasoning. If you would prefer spicier tacos, you can add more chili powder to the seasoning, and add diced jalapeño peppers as a topping. You can also use a spicier topping like our mango jabañero salsa.

How can I tell if the shrimp is done cooking?

Shrimp is done cooking when it has turned color, and when a thermometer shows an internal temperature of 145°F.

What’s the best way to store leftovers?

These shrimp tacos are best enjoyed shortly after they are made. However, you can store leftover tacos in an airtight container in the refrigerator for up to 2-3 days. Reheat in the air fryer for the best results.

These air fryer shrimp tacos are perfect for Taco Tuesdays and Cinco de Mayo!

Serve them with a side of with elote dip (Mexican street corn dip), Mexican street corn pasta salad, vegetarian Mexican rice, and/or shrimp corn pasta salad.

Enjoy them with a prickly pear margarita, yuzu margarita, spicy mango margarita, or Champagne margarita.

🍷 🥂 Wine pairings

If you prefer to pair these shrimp tacos with wine, go for either a rosé or a white wine.

Chenin Blanc – I love pairing these shrimp tacos with my favorite Mexican Chenin Blanc. The wine is crisp with a refreshing minerality that complements the fresh seafood flavors.

Rosé wine – The light refreshing fruit flavors of a dry rosé wine pair so well with the shrimp and bold seasonings.

Easy and delicious shrimp tacos with a simple mango relish.

Ingredients 

Toppings

  • 6-8 street corn size tortillas
  • 1 mango, diced
  • 1 Tablespoon finely diced red onion
  • 1 Tablespoon fresh lime juice
  • ½ Tablespoon chopped cilantro
  • 1 cup shredded cabbage , or pre-made mix of shredded slaw

Instructions 

  • In a large bowl, mix together the shrimp, olive oil, paprika, chili powder, garlic powder, onion powder, cumin, oregano, salt and pepper. Toss until the shrimp are evenly coated.
  • Line the air fryer basket with parchment paper. Place the shrimp on top, leaving a bit of room between (do not crowd the shrimp). If necessary, work in batches and/or you can stack a rack on top of the first layer, line with parchment, and place more shrimp on top.
  • Air fry at 400°F for 7-8 minutes. Check first at 7 minutes.
  • While the shrimp is air frying, warm up the tortillas either in a pan or microwave.
  • In a large bowl, mix together the mango, red onion, lime juice, and cilantro. Set aside.
  • When shrimp is cooked, assemble the tacos, including the tortillas, shredded cabbage, mango relish, and cooked shrimp. Serve immediately.

Notes

Makes approximately 6-8 street tacos, or 4 servings.
Shrimp Doneness: Shrimp will be done when a thermometer shows an internal temperature of 145°F, so I usually stop cooking when shrimp reaches around 135-140°F since the shrimp will continue cooking.
You can also use our mango pico de gallo or simple pico de gallo instead of the mango relish in this recipe.
