I love a versatile ingredient. One that you can transform in several different ways that works as both a standalone dish and elevates others. Some of my favorite examples are pasta, eggs, and mushrooms.

That’s one of the reasons I love cabbage. Lately, I’ve started using a lot more of it in my recipes. It’s inexpensive, easy to layer in flavors, has great texture, and can be used in so many different types of dishes.

How do you keep cabbage from smelling in the fridge?

Exposure to moisture is one of the main ways cabbage can start to smell. To prevent this, don’t wash cabbage until you’re ready to start using it. Simply leave it in a plastic produce bag in the fridge. If you have leftover unused cabbage, cover it in plastic wrap or place it in an airtight container before you refrigerate it again.

How do I keep cabbage from getting soggy when I cook it?

The key is to not overcook it. So if you’re sautéing cabbage, check it with a fork every few minutes to make sure it’s still slightly firm and crisp, not mushy. If you’re braising it for a longer period, cut the cabbage into wider strips to help it hold its texture better.

When should you add dressing to coleslaw?

If you want a really crunchy coleslaw, add the dressing right before you serve. That way, the dressing won’t cause the cabbage to start breaking down and getting mushy. However, if you want a softer, more tangy slaw, add the dressing 1-2 hours before serving. The cabbage will absorb more of the dressing for a deeper flavor.
