Spring and summer are some of my favorite times to entertain. Not only because the weather tends to be gorgeous outside, but also because the fresh produce is so colorful and amazing!

When planning spring menus, I know that deviled eggs are almost always on the table. But, let’s be honest: deviled eggs can, quite frankly, be a bit of a pain sometimes. Oh, they are delicious!

But, they do take some time… You have to scoop out the yolk, whip together with other ingredients, then masterfully pipe into the egg white boats that hopefully didn’t break while you were scooping out the yolks.

There are easier egg appetizers, my friends. Simply cut hard-boiled eggs in half, and top with beautiful fresh toppings.

So easy, right? Why complicate things when we don’t need to?

I’ve got two super simple appetizer recipes using hard boiled eggs: one healthier version and one slightly more indulgent version.

Both of these egg recipes will make you look like the hostess with the mostest.

This appetizer is one of my favorite simple spring appetizers. I adore spring veggies, and you can honestly use any that strike your fancy. I topped hard-boiled egg halves with lightly sautéed asparagus, sliced radish, a tiny sprinkling of sea salt, and chopped chives. Then I drizzled some Litehouse Organic Ranch dressing over each one, and voila: instant stunning spring appetizer!

Now, for my fellow bacon lovers in the house, and for those friends and relatives who scoff at the sight of a veggie, these Easy Bacon Ranch Eggs are the answer.

Simply take the remaining hard-boiled egg halves and top them with cooked, chopped bacon bits. Then drizzle Litehouse Organic Ranch dressing over each one. Finish them all off with a sprinkling of fresh chives.

Done! Place the egg appetizers on pretty plates, and you’re all ready to enjoy the time with your friends and family instead of sweating it out in the kitchen.

Ingredients 

Additional ingredients for Veggie Ranch Eggs

  • 2-3 radishes, sliced
  • 2-3 asparagus spears
  • 1/2 tsp kosher salt
  • 1 tbsp chopped chives

Additional ingredients for Bacon Ranch Eggs

  • 2 slices bacon, cooked and chopped into little pieces
  • 1/2 tsp kosher salt
  • 1 tbsp chopped chives

Instructions 

Make the Instant Pot Hard-Boiled Eggs

  • Place the rack that came with your Instant Pot or an egg rack inside the pot. Gently place eggs on top of the rack. Pour 1 cup of water over the eggs.
  • Close and seal the lid, pressure cook (or manual) for 4 minutes, then quick release. Immediately rinse under cold water and peel.

Add Toppings

  • For Veggie Ranch Eggs: add your preferred veggie toppings, sprinkle kosher salt and chopped chives over each egg, and drizzle Litehouse Organic Ranch dressing over each egg. Serve immediately.
  • For Bacon Ranch Eggs: top egg halves with chopped bacon and chives, drizzle Litehouse Organic Ranch dressing over each egg. Serve immediately.

Notes

NOTE: I make the eggs in my 8-quart Instant Pot Duo, but you could also make this in a 6-quart Instant PotDo not attempt to make this in a 3-quart pressure cooker. If you do not have an Instant Pot or other pressure cooker, you can make the hardboiled eggs with the traditional stovetop method. Then continue with the remaining steps.
