🍄🟫 Why vegan mushroom recipes are a game-changer
Mushrooms are often referred to as the “meat” of the plant-based world—and for good reason.
Their ability to absorb flavors and mimic the texture of meat makes them an ideal ingredient in vegan cooking. Here are a few reasons why we love vegan mushroom recipes and why we think you'll love them, too!
- Rich in nutrients - Mushrooms are packed with essential nutrients like B vitamins, selenium, potassium, and copper. They’re also one of the few plant-based sources of vitamin D, making them a valuable addition to any diet.
- Umami flavor - Umami, often referred to as the “fifth taste,” is a savory flavor that adds depth and richness to dishes. Mushrooms are naturally high in umami, which is why they’re often used to enhance the flavor of vegan meals.
- Versatility - From sautéing and roasting to grilling and stuffing, mushrooms can be prepared in countless ways. They work well in a variety of cuisines, from Italian to Asian, making them a versatile ingredient for any dish.
- Sustainable and ethical - Choosing mushrooms as a key ingredient in your meals supports a more sustainable and ethical food system. Mushrooms require less water and energy to produce compared to animal products, and they’re often grown in environmentally friendly ways.

To achieve a creamy texture in mushroom dishes while keeping the recipes vegan, we often use plant-based milk alternatives. Our favorites include coconut milk, cashew cream, or almond milk. But if you can find a dairy-free heavy cream at your local grocery store, that works great, too!
Nowadays, it's also easier to find vegan butter, vegan cream cheese, and vegan sour cream at local grocery stores.
👩🏻🍳 Tips for cooking with mushrooms and recipe FAQs
We love cooking with mushrooms and cook with them often. Over the years, we've fielded a lot of questions about cooking with mushrooms.
Here are some commonly asked questions, and our suggestions. We hope you find them helpful in making any of these vegan mushroom recipes!
Mushrooms can absorb water like a sponge, so it’s best to avoid soaking them. Instead, gently wipe them with a damp cloth or use a soft vegetable brush to remove any dirt. If they’re particularly dirty, a quick rinse under cold water is fine, but make sure to dry them thoroughly with a paper towel before cooking.
Read each recipe carefully for recommendations. But in most cases, you can use almost any type of mushroom. Each variety has its own flavor and texture. For example, portobello mushrooms are great for grilling or stuffing, while shiitakes add a rich, umami flavor to soups and stir-fries. Button mushrooms are versatile and can be used in most recipes, while cremini mushrooms offer a deeper flavor similar to portobellos.
To enhance the meaty texture and flavor of mushrooms, consider marinating them in soy sauce (coconut aminos or tamari), balsamic vinegar, or liquid smoke before cooking. Searing them in a hot pan or roasting at a high temperature can also help achieve a more substantial, caramelized texture.
To avoid soggy mushrooms, make sure not to overcrowd the pan when sautéing them. Cook them in batches, if necessary, and use high heat to help evaporate the moisture quickly. Roasting mushrooms in the oven at 400°F (200°C) also helps them caramelize and prevents them from becoming mushy.
Raw mushrooms don’t freeze well, as they tend to become mushy when thawed. However, you can freeze them after cooking. Sauté or roast the mushrooms first, then let them cool before transferring them to an airtight container or freezer bag. They can be stored in the freezer for up to three months.
In addition to using non-dairy substitutes, you can try blending cooked potatoes or cauliflower into a sauce. This can also add creaminess. Nutritional yeast can be added for a cheesy flavor. Meanwhile, a splash of white wine can enhance the richness of the dish.
🍷 🥂 Wine pairings for mushroom dishes
Pinot Noir: This light to medium-bodied red wine has earthy undertones that pair exceptionally well with the umami flavor of mushrooms. Its subtle tannins and red fruit notes make it an ideal match for dishes like mushroom risotto or bourguignon.
Chardonnay: For those who prefer white wine, a lightly oaked Chardonnay is a great choice. Its buttery texture and hints of vanilla complement creamy mushroom dishes like stroganoff or stuffed mushrooms.
