This One-Pan Skillet Gnocchi with mushrooms is a fast, easy, satisfying dish that's vegetarian, dairy-free, and perfect for Meatless Mondays!

Back-to-school season is here, and during these hectic days and nights, it's oh so tempting to simply reach for take-out or delivery for dinner. I love dining out with my family! But, we do try to keep a list of super easy, wicked fast, and crazy delicious meals to cook at home that can fit into our busy schedule.
While I've got a large recipe collection of dishes that are made 100% from scratch, I know that it's not always feasible to cook every meal that way. In our home, I have learned to rely on a few simple store-bought shortcuts that save time and money, but still deliver high on flavor and nutrition.

Store-bought gnocchi is one of them. I'd love to be able to make gnocchi and pasta from scratch each Sunday for the week ahead. But let's be real: that's just not going to happen in my life right now.
The key for this recipe is to purchase the 5-minute gnocchi packages in your grocery store's refrigerated deli section. I discovered them a few years ago, and they have changed my life! Pre-packaged gnocchi gives us one more fast option for amazing at-home dinners.

🌟 Why this recipe works

This dish is something that I will sometimes whip up for one of my Fast Lunch meals when I work from home, but it's also an amazing dinner to feed the family when you're short on time.
Thanks to store-bought, refrigerated packages of gnocchi, this dinner comes together in 20 minutes or less! You definitely want to use the refrigerated deli section gnocchi, and not dry shelf-stable gnocchi, as the cooking times are different for those.

I've doubled the recipe I normally make for lunch, so this recipe makes about 4 servings.
🍄 Ingredients
There are just five simple ingredients - butter, garlic, mushrooms, gnocchi, basil. Often the simplest ingredients create the freshest, best tasting meals!

One-pan dinners are such a time saver, and I love having less pots and pans to clean-up (who doesn't, right?!).
Plus, the gnocchi really soaks up the buttery mushrooms and garlic as you stir all of the ingredients together. The butter gives the gnocchi a light, crispy coating. This really allows you to enjoy the other flavors, versus cooking it with a heavy sauce.

Mushrooms: a Meatless Monday star

The mushrooms add richness and depth to the dish. This makes it a fantastic Meatless Monday meal that will leave meat lovers satisfied. Plus, if you use a vegan butter as I do (I love Earth Balance brand), it's dairy-free!
Although, you could add a sprinkling of cheese if you really wanted to. If you don't have any dairy issues, go for it!

Refrigerated packaged gnocchi is one of the best, most delicious kitchen shortcuts for those nonstop busy weeknights. I try to always have a package or two in my fridge. They've saved my last-minute meal decision hide on more than one occasion!
🍷 Wine pairings for mushroom gnocchi
There are two ways you could go with a wine pairing for this skillet gnocchi.

You could pair this dish with a Pinot Noir. This lovely red wine could help bring out the natural umami flavors of the mushrooms.
Or, you could pair it with an unoaked or lightly oaked Chardonnay or a crisp Pinot Gris. Both would complement the buttery fluffy gnocchi.

Skillet Gnocchi with Mushrooms
Ingredients
- 4 tbsp butter (vegan or regular, whichever you prefer)
- 3 cloves garlic, peeled and minced
- 1 - ¼ cup cremini mushrooms, evenly sliced
- 2 pkgs refrigerated, packages of gnocchi (usually in your store's deli section)
- 2 tsp basil, finely chopped
Instructions
- Melt butter in a large cast iron skillet or sauté pan over medium-high heat.
- Add minced garlic and stir, heating the garlic for about 30 seconds before adding the mushrooms to the pan. Stir mushrooms and garlic for 1-2 minutes.
- Add gnocchi to the pan and stir ingredients together. Cook gnocchi for 4-5 minutes, stirring regularly.
- Sprinkle chopped basil evenly over pan and stir ingredients, cooking for about one more minute. Gnocchi will be slightly browned and crisp on the outside.
- Remove skillet from heat. Serve immediately.
