    This CPK Thai Chicken Pizza copycat recipe is your new favorite homemade pizza! It's packed with veggies and a delicious peanut sauce, and can easily be made dairy-free or with cheese.

    As much as we cook at home, my family enjoys eating out or getting takeout a few times a month. One of my favorite pizza options was the Thai Chicken Pizza from California Pizza Kitchen (CPK).

    This homemade Thai style pizza recipe is inspired by CPK's pizza! It's dairy-free, but still full of big tangy flavors, tons of healthy vegetables, and lots of yummy crunchy peanuts.

    We love making this for family pizza night, which we usually have on Friday nights. It's the perfect way to end the work week on a delicious note!

    This CPK Copycat recipe is a homemade version of their Thai Chicken Pizza is:

    • Savory and tangy, with yummy Thai flavors, thanks to the delicious, slightly thicker peanut sauce.
    • Packed with nutritious veggies.
    • Full of crunch thanks to the peanuts and the veggies.
    • Easy to make dairy-free, traditional with dairy, or vegetarian.

    I love this easy Thai chicken pizza because it's packed with yummy veggies. The pizza is SO flavorful, even without any cheese!

    The full ingredients list with measurements is in the printable recipe card at the bottom of this post, but here are some key notes:

    Pizza crust - You can use a homemade pizza dough recipe, or your favorite pre-made crust.

    🥜 Sauce - For Thai flavor, we're using a tasty Thai peanut sauce instead of traditional pizza sauce or BBQ sauce. You just need a few simple ingredients to make this Asian-style peanut sauce: peanut butter, hoisin sauce, soy sauce, rice wine vinegar, ginger, and garlic. You could also make this Thai peanut sauce recipe or use your fave store-bought peanut sauce.

    🍗 Chicken - I only use a small amount of diced chicken breast for this recipe, but you can feel free to add more if you prefer. A great shortcut if you need one: use rotisserie chicken from the grocery store or leftover chicken. And, it's easy to make this a vegetarian pizza by simply omitting the chicken.

    Veggies - I use the same vegetables that you'll find on the original CPK version: matchstick carrots, red onion, garlic, green onions. Other veggies you can add: julienned cucumbers, zucchini, chopped red bell pepper, or chopped broccoli would all be great on this pizza!

    Bean sprouts - You can find bean sprouts in your produce section, usually near other Asian ingredients such as ginger root. These add a nice crunch to the pizza, but you can leave this out if you prefer.

    ✅ Step-by-step instructions

    Start with either an easy homemade crust, or your favorite store-bought pizza crust.

    Chop the crunchy carrots and other vegetables and mix together the sauce ingredients. Then all that's left to do is to assemble and cook your pizza!

    A nice, thick layer of peanut sauce is topped with the chicken, then the veggies.

    Now, if you DID want to add mozzarella cheese, I'd add a layer that mingles with the veggies, so that the beautiful veggies shine through.

    Optional: top the Thai pizza with red pepper flakes and/or fresh cilantro leaves.

    Bake at 400° degrees for 10-15 minutes.

    This is a good pizza to serve along with Thai Chicken Salad -- another CPK copycat recipe! Or with Asian dishes like Air Fryer Crab Rangoon, Wonton Soup, or Air Fryer Bang Bang Shrimp.

    It's also delicious with Sausage Tortellini Soup, Air Fryer Corn Ribs, or Simple Fruit Salad.

    What's the best way to reheat pizza leftovers?

    The best way to reheat pizza so that the crust is nice and crispy is in the air fryer. Air fry at 350°F for 2-3 minutes, or until heated through.

    Bonus: this is one pizza that tastes just as AMAZING - if not more! - the next day for leftovers!

    Whether you have regular family pizza nights or you're hosting a birthday pizza party, here are some kitchen tools to help you have the best pizza experience.

    • Pizza peel: A pizza peel can help you slide your pizzas in and out of the oven like a pro.
    • Pizza stone: If you don't have a pizza oven, a pizza stone will help heat up the pizza in a standard kitchen oven quickly and give it a nice professional crust. Or you can use a regular pizza pan.
    • Pizza cutter: This sturdy wheeled pizza cutter is great for cutting pizza, as well as pie crust and pastry dough.

    Ingredients

    • Homemade or store-bought pizza dough
    • 2 Tablespoons olive oil
    • 1 cup diced chicken breast about 1.5 - 2 chicken breasts, depending on size and your preference regarding how much chicken you want to add

    PEANUT SAUCE

    • ½ cup softened creamy peanut butter
    • ½ cup hoisin sauce
    • 2 teaspoons soy sauce
    • 1 teaspoon rice wine vinegar
    • 2 Tablespoons water
    • 1 Tablespoon honey
    • 1 Tablespoon minced ginger
    • 2 garlic cloves minced
    • 1 Tablespoon sesame oil

    PIZZA TOPPINGS

    • ½ cup julienned carrots
    • ½ cup julienned or finely diced red onions
    • ½ cup bean sprouts
    • 2 Tablespoons chopped cilantro or parsley
    • 2 Tablespoons dry roasted peanuts
    • 1 Tablespoon chopped green onions

    Instructions

    • Preheat oven to 450° degrees

    MAKE THE PEANUT SAUCE

    • In a small or medium pot over medium heat, combine all of the ingredients listed above for the Peanut Sauce, starting with the peanut butter and ending with water.
    • Whisk ingredients together slowly to combine and bring the mixture to a boil.
    • Let the mixture boil for about 30 seconds, whisking until smooth.
    • Remove from heat.
    • Divide sauce into two equal portions - one will be used for the chicken, and the other for the pizza sauce. Set aside.
    • Heat olive oil over a large non-stick skillet on medium-high heat. Once the pan is hot, add the diced chicken and stir to evenly cook. This should take about 5-7 minutes.
    • Turn off the heat, and slowly pour half of the peanut sauce that you've set aside for the chicken over the chicken. Stir the chicken and the sauce to coat the chicken. Set aside on a plate.
    • Place your prepared pizza dough on top of a pizza pan.
    • Using a pastry brush, brush olive oil along the sides of the crust.
    • Top with the remaining half of the peanut sauce that you had set aside. You can use the same pastry brush to spread the sauce evenly over the pizza dough.
    • Sprinkle the carrots, red onions, bean sprouts, cilantro, peanuts, and green onions evenly over the pizza.
    • Bake at 450 degrees for about 8-11 minutes, just until the edges of the crust are golden.
    • Enjoy immediately and save leftovers for the next day!

    Notes

    Cheese: I made this dairy-free, but you can always add mozzarella cheese to this if you want a more traditional cheesy pizza!
    Gluten-free: Make it gluten free by using a pre-made gluten-free pizza dough, or cauliflower pizza crust.
    Storage: Store leftover pizza in aluminum foil or an airtight container in the refrigerator for up to three or four days. 
    Reheat: reheat by placing pizza slices in an air fryer and air frying at 350°F for 2-3 minutes. Or place on a microwave-safe plate and microwave in 30-second increments until heated through.
