In Portland, we're used to having three seasons in one day, but lately the temperature swings have been a bit much. Recently, we went from 102 degrees to 55 degrees within two days. Talk about a shock to the system!
But I know that soon temperatures will even out and we'll get our beautiful mild 70-80 degree with no/low humidity perfect summer. It's coming, and I can't wait!
To cool off this summer, it's fun to head down to the Portland waterfront and enjoy some refreshing cocktails while looking out at all of the activity on the Willamette River. Three Degrees restaurant is one of the few restaurants in Portland with a true downtown waterfront location. During the summer, they create a 10-seat outdoor grill pop up right on the waterfront featuring Tacos and Tequila.
Tacos and Tequila
Now through October, every Wednesday through Sunday from 12 noon to close, you can angle for one of the coveted 10 seats at the TDs Pop Up for Tacos and Tequila.
You can choose from 6 different tacos, including my favorite - the Tequila Braised Pork Belly (bottom taco pictured above) with mango, peanut morita salsa, and chicharron.
There are also two fish options, which my friend enjoyed: Rockfish a la Talla ($5, pictured above) with olive tomato relish and marinated habaneros, and Chile Rubbed Albacore ($4, pictured below) with cucumber jicama relish and lime crema.
To help you wash down your delicious tacos, I suggest ordering the Spicy Strawberry Margarita ($10).
Spicy Strawberry Margarita
This spicy strawberry margarita is AMAZING.
It is the perfect balance of strawberry sweetness and a little kick that hits at the back of your throat. I'm honestly a total spice wimp, but I LOVED this margarita. It wasn't too spicy for me, but it was by no means a regular ol' mild margarita either.
This is a margarita full of summer sass and a touch of sunshine sweetness. You are going to love it, too, I just know it!
Thanks to Chef Lauro Romero, who has agreed to share the recipe, you can make these minxy margaritas at home to pour and enjoy during all of your summer barbecues, picnics, and late nights just enjoying the sun go down.
Spicy Strawberry Margaritas
- 2 oz. fresh squeezed orange juice
- 1 oz. fresh squeezed lime juice
- ½ oz. grand Marnier
- 1 oz. sugar
- 10 ea local strawberries
- ½ ea dry moritas or dry chipotle
- 1.5 oz. Tequila
- Fill a sauce pot with water add the dry chili turn heat on, bring to a boil and simmer for 15 minutes or until chili is rehydrated.
- Place the strawberries in a blow and wash, take green tops off and place the strawberries, rehydrated chili, sugar, Gran Marnier, orange and lime juice in a blender and puree until smooth.
- Put 6oz. of strawberry mix with 1.5oz. Tequila to a shaker. Shake with ice. Serve over ice. Garnish with a sliced strawberry and lime wedge.
