- In a highball glass or other glass, pour in the pineapple juice
- Add the simple syrup.

This mocktail is best enjoyed right after it is made. However, you can make a small pitcher of everything but the ice (triple of quadruple the recipe) and refrigerate it until you are ready to serve. Then add the ice.

Ingredients
- 3 ounces pineapple juice
- 1 ounce simple syrup
- crushed ice
- ginger beer
- optional: lemon slices, mint leaves, pineapple slices for garnish
Instructions
- Add pineapple juice and simple syrup to a glass.
- Fill the glass with ice almost to the top.
- Pour in the ginger beer to fill up almost to the top.
