    This Pineapple Mocktail recipe is easy to make at home with just a few ingredients. It's a refreshing, tropical mocktail that's a great drink to enjoy on a hot summer day!

    When the temperatures rise outside, there's nothing like a refreshing, cold drink with tropical flavors to cool you down.

    For those times you don't feel like imbibing with alcohol, go for one of our non-alcoholic cocktail recipes. This Pineapple Mocktail recipe is one that I reach for often, especially during the warm summer months.

    The bright tropical flavors and tangy ginger give island vibes. It's great for serving at any backyard BBQ, picnic, beach, or summer dinner party.

    • Versatile - This recipe is the perfect base for so many variations! You can switch up flavors by substituting lime juice, orange juice, or any other citrus fruit drink instead of pineapple juice.

    This mocktail mixture is made of simple ingredients you can find at almost any grocery store.

    • Pineapple juice - The main ingredient for this easy mocktail recipe. I find that a low-sugar or no-sugar added pineapple juice tastes best in this pineapple mocktail recipe.
    • Simple syrup - You can make your own simple syrup easily at home (try our homemade simple syrup recipe). Or, use store-bought simple syrup.
    • Ginger beer - This is my favorite brand of ginger beer. I find it lends the best flavor to mocktails.
    • Ice - You can use cubed or crushed ice.
    • Optional garnishes: mint leaves, lemon slices or lemon wedges, pineapple wedge.

    1. In a highball glass or other glass, pour in the pineapple juice
    2. Add the simple syrup.

    3. Fill the glass with ice cubes or crushed ice.
    4. Pour in the ginger beer.

    Then garnish with fresh mint leaves, pineapple slices, lemon slices or lemon wedges, and serve!

    Can I double this recipe?

    Yes! You can easily double the recipe to make two mocktail drinks. You can even triple or quadruple it to make a small pitcher with 3 or 4 servings.

    Does ginger beer have alcohol in it?

    No. Despite the name, ginger beer does not have any alcohol in it. Ginger beer is a sweet carbonated beverage usually made with ginger spice or ginger root, yeast, and sugar.

    Can I make this pineapple mocktail ahead of time?

    This mocktail is best enjoyed right after it is made. However, you can make a small pitcher of everything but the ice (triple of quadruple the recipe) and refrigerate it until you are ready to serve. Then add the ice.

    Ingredients

    • 3 ounces pineapple juice
    • 1 ounce simple syrup
    • crushed ice
    • ginger beer
    • optional: lemon slices, mint leaves, pineapple slices for garnish

    • Fill the glass with ice almost to the top.
