And while I love brunch with my sweet little family, I also adore having my girlfriends over for a girls' weekend brunch.
Sure, we could pour some prosecco or rosé or whisky and call it good. But a brunch with my best girlfriends calls for a special drink to clink our glasses and cheers to life.
Enter: Raspberry Mimosas.

🥂 What is a mimosa?
A mimosa is a cocktail that is usually made of Champagne and juice.
It's usually served in a tall Champagne flute glass, and typically for brunch, weddings, bridal showers, and spring celebrations.
If a standard mimosa is on the menu, that usually denotes a cocktail that is equal parts Champagne and orange juice. However, as you can see from this post, there are several variations of mimosas out there to enjoy!

5-ingredient brunch cocktail
Raspberries - Use fresh raspberries for these mimosas. If you can only find frozen raspberries that's fine to use in the raspberry
Champagne - You can use Champagne or any sparkling wine you like. My favorite sparkling wine to use in mimosas is Prosecco. But you can also use Cava from Spain or a general Sparkling Brut wine from the US.
Orange juice- In true classic mimosa form, we're using orange juice for these raspberry mimosas.
Water + sugar - You'll need water and granulated sugar to make the simple syrup for these mimosas.
Optional: orange peel and mint leaves - these are optional to garnish your mimosas. They add some bright colorful and aromatic flare to these already festive cocktails!
🥣 Kitchen tools and equipment
For this recipe, you just need a few basic kitchen tools:
Large pot - You'll need a large pot to make the raspberry syrup. I use my Dutch oven.
Strainer - Use a fine mesh strainer to strain the liquid and separate it from the raspberry seeds.
Large bowl - You'll be straining the liquid first into a large bowl. Then into a smaller jar or measuring cup with pouring spout to pour into the glasses.

In a medium saucepan over low to medium heat, add the water, sugar, and raspberries.
Set out two glasses. To each glass, add 1 tablespoon of orange juice, 2 tablespoons of raspberry syrup. Then fill the rest of the glass up with Champagne or sparkling wine.
Cook over medium heat for about 2 to 3 minutes, just until the raspberries turn soft and you can squish them with a spatula or spoon. Stir regularly, to mix together the ingredients.
Strain the liquid out over a large bowl using a fine mesh strainer, so that only the liquid is left in the bowl. Pour the liquid into a jar or measuring cup with spout that makes it easy to pour out.

🍹 Mimosa Tips and FAQs
Orange juice is used in traditional mimosas. Depending on the flavor profile you are going for, you can also use mango juice, pineapple juice, grapefruit juice, or other citrus juices.
I prefer to use Italian Prosecco in my mimosas. Prosecco is light and effervescent sparkling wine made with mostly Glera grapes from the Veneto region of Italy. You can usually find a good Prosecco for mimosas under $20, with most around $12 to $15.
Yes! Like most cocktail recipes, you can simply double this recipe to make 4 cocktails or tripe it to make 6 cocktails.
