Puff pastry dough - You'll need one package of store-bought puff pastry dough. Each package usually comes with two sheets of puff pastry.
Strawberries - Use fresh or frozen strawberries. If you're using frozen, be sure to measure out the strawberries then thaw them out at room temperature before using.
Sugar - Granulated sugar helps add to and bring out the natural sweetness of the strawberries.
Vanilla extract - You will love the rich depth of flavor that the vanilla adds to the homemade strawberry filling.
Egg wash - Combine one beaten egg with one tablespoon of water to create the egg wash that coats the pastry before baking. This is what gives the pastry that gorgeous golden crispy glow when it bakes!
OPTIONAL: Icing - You can drizzle a classic pastry icing glaze over the turnovers if you wish.

1. In a medium pot, add the strawberries, sugar, and vanilla.
2. Stir together and simmer on low to medium heat for 10 minutes. Remove from the stove and allow to cool completely.
3. In the meantime, roll out two puff pastry sheets. With a sharp knife, cut out 4 equal squares, for a total of 8 squares.
4. Add one tablespoon of the fresh strawberry filling to the center of each square. Dip your fingers in a little water and wet the edges of each square. Fold one corner of a square to the other to form a triangle, then press the sides together. Fold dough for all squares until you have 8 triangles.
5. Use the tines of a fork to press down around the edges to further seal the edges of each triangle together.
6. Combine the egg and remaining water in a small bowl and whisk together to create an egg wash. Use a pastry brush to brush egg wash over the tops of each triangle.
7. Spray the interior of your air fryer with non-aerosol avocado oil spray. Place the prepared turnover triangles onto a piece of parchment paper in the air fryer basket or tray(s) in a single layer. Depending on the size of your air fryer, you may need to work in batches.
8. Air fry at 400°F for 15 to 18 minutes, until the tops of the turnovers and edges are golden brown and the puff pastry is cooked through. Garnish with additional sliced strawberries, if desired.
9. Drizze with icing, if desired.

In a large bowl or glass measuring cup with spout, combine 1 ยฝ cups powdered sugar with 3 to 5 tablespoons of milk (start with 3 and work up to 5 tablespoons if necessary) and ยฝ teaspoon of vanilla. Whisk together. Add more powdered sugar if you want it to be thicker; add more milk if you want the glaze to be thinner. Drizzle over the top of each turnover and allow the icing glaze to set.
