I'm always experimenting with creating new pasta recipes. And although we are definite meat eaters in my family, I am trying to incorporate more plant-based meals. Meals that are still big on flavor, that are hearty and satisfying – where we don't miss the meat.
This easy pasta recipe is a fantastic plant-based pasta that's delicious as the main meal, or as a side dish. It's amazing because:
- you can make this from start to finish in just 20 minutes,
- it only requires under 10 ingredients,
- the sweet paprika flavor takes center stage and mingles with a silky creamy coconut cream white wine sauce,
- you can portion it out easily for meal planning,
- and it freezes and reheats well.
Ingredients to make this creamy paprika pasta

You probably already have everything you need to make this fast and easy pasta recipe! It just takes less than 10 ingredients.
- wide egg noodles - these hearty wide egg noodles soak up the sauce beautifully. You could also use other wide pasta noodles, such as pappardelle or tagliatelle. Or try this with spiral or corkscrew pasta shapes, like fusilli or rotini, or cavatappi. This pasta recipe would even work with bow tie farfalle noodles.
- butter - I use unsalted butter. If you only have salted butter, just be sure to eliminate the salt when seasoning. For dairy-free pasta, I use this dairy-free butter.
- garlic - the base of all good pasta dishes! This recipe calls for three cloves, but you can certainly use more or less, depending on your affinity for garlic (I love it!)
- dry white wine - always cook with a wine that you enjoy drinking! Definitely make sure you are using a dry white wine and not an off-dry or sweet wine, which will alter the flavor of this dish dramatically. I use a dry Pinot Gris for most of my pasta dishes.
- vegetable broth - use vegetable broth to keep this a vegetarian dish. If you prefer, and you do not stick to a vegetarian diet, you could also use chicken broth or chicken stock.
- coconut cream - this is what makes the pasta sauce silky and creamy. You can buy canned coconut cream. Or, refrigerate a can of full-fat coconut milk and then skim the cream off the top of the can.
- ground paprika - ahh the superstar of this dish: paprika. I use sweet paprika as opposed to smoked paprika, but honestly, I think you could use smoked paprika if you want a deeper, spicier flavor. As with all ground spices, the fresher your paprika is, the more flavorful the dish will be. Regularly check your spices to ensure freshness and the best flavor.
- kosher salt and ground black pepper - I use kosher salt in the majority of my cooking, and especially for pasta dishes. It imparts more flavor throughout the pasta, as does freshly ground black pepper.

How to make this pasta recipe

Cook pasta according to package directions. Meanwhile, in a large skillet, melt the butter over medium heat. Add the garlic and sauté until just softened.
Next, sprinkle in the flour and whisk until incorporated into the liquids. Then slowly pour in the wine and stir into the other ingredients. Slowly add the broth, stirring the sauce the whole time you are adding this ingredient. Sprinkle in the star of the show, the paprika, and stir to combine. Then stir in the coconut cream until well combined.
Add the cooked pasta to the pan and gently toss to coat. Season with kosher salt and pepper to taste. If you'd like, you can top with a generous helping of parmesan cheese (or dairy-free grated parmesan) and chopped parsley, if desired.

Creamy Paprika Pasta
Ingredients
- 8 ounces uncooked wide egg noodles
- 3 tablespoons butter
- 3 cloves garlic, minced
- 2 tablespoons flour
- ¼ cup dry white wine
- 1 ½ cup chicken broth
- 2 teaspoons paprika
- ½ cup coconut cream (or the cream part of canned coconut milk)
- pinch salt and pepper
- Optional: grated parmesan cheese, finely chopped parsley

- Sprinkle in the paprika, stir to combine. Then stir in the coconut cream until well combined.
- Add the cooked pasta to the pan and gently toss to coat.
- Finish with salt and pepper to taste, and top with parmesan cheese and chopped parsley, if desired.
