  • Bread – You can use almost any kind of bread you want – French bread, baguette, brioche bread, whole grain bread, whole wheat bread, white bread. Whatever your favorite bread is, use it! Just make sure it toasts up nicely in order to hold the toppings well.
  • Blueberries – Use fresh blueberries.
  • Cream cheese – Use whipped cream cheese for the best results, or simply whip up regular cream cheese with a spoon or butter knife before spreading onto the toast.
  • Lemon – You’ll need both lemon juice and lemon zest.
  • Honey – Honey in the blueberry compote adds a lovely layer of rich sweetness to every bite. You can also add some optional honey drizzled over the top just before serving.

✅ Step-by-step instructions

  1. Start by making a quick blueberry compote. Add a cup of blueberries, honey, and lemon zest to a small saucepan over medium-high heat.
  2. Stirring regularly, bring the mixture to a boil.
  3. Then lower the heat and simmer until the sauce has slightly thickened. Turn off the heat and allow the blueberry compote to cool slightly.

4. Meanwhile, toast the bread slices in a toaster oven, air fryer, or on a grill pan.

5. Place the toast slices on a plate.

6. With a butter knife, add a spread of light cream cheese over the tops of each slice of bread.

7. Spread the cream cheese just to the edges.

8. Spoon some jammie blueberries over the creamy spread.

9. Garnish with a little sprinkle of lemon zest and, of you want, a drizzle of honey.

  • Watch the blueberry mixture as it cooks very carefully. Immediately turn the heat down as soon as it boils so that it cooks evenly and doesn’t burn.
  • Save any berry compote and leftover berry liquid to serve on toast another day. Simply store in an airtight container like a mason jar in the refrigerator. It should keep for up to one week.
  • Other ingredients that would be delicious on this brunch treat: chia seeds, flaxseed, almond slices, orange zest.
What can I substitute for cream cheese?

You can substitute Greek yogurt, goat cheese, cottage cheese, or ricotta cheese. I use my favorite dairy-free cream cheese to make this a dairy-free toast recipe.

Can I use frozen blueberries?

For best results, use fresh blueberries. However, you can use frozen blueberries. You may need to drain out some of the juices after you make the compote, since frozen blueberries will release a lot more liquid than fresh blueberries.

What’s the best way to store leftover blueberry toast?

This fancy toast is best enjoyed immediately after it is made. However, if you do have some leftover, you can store it in an airtight container in the refrigerator for about 24 hours. The longer the blueberry compote sits on top of the piece of toast, the soggier the toast will get.

This easy toast is bursting with blueberries and bright citrus flavors. A delicious breakfast, snack, or light lunch that you can make in 20 minutes!

Ingredients 

  • 1 cup blueberries
  • ¼ cup honey + more for serving
  • 1 Tablespoon lemon juice
  • 1 teaspoon lemon zest + more for serving
  • ½ cup (4 ounces) cream cheese, softened
  • 4 slices French bread, baguette, or other thick bread

Instructions 

  • In a small saucepan over medium-high heat, add the blueberries, honey, lemon juice, and lemon zest. Bring to a boil, then lower the heat to medium and stir regularly with a wooden spoon. Gently smash the blueberries as they cook to release some juice, but don't smash too much; you just need a little released to turn the compote juices into that beautiful blueberry color.
  • Remove from the heat and allow to cool slightly.
  • Toast the slices of bread.
  • Spread the softened cream cheese on top of each toasted bread slice. Try to spread an equal amount on each slice.
  • Top each toast with a couple of tablespoonfuls of the blueberry compote.
  • Sprinkle additional lemon zest and drizzle a little honey over each toast. Serve immediately.

Notes

Makes 4 blueberry toast pieces.
Make it vegan/dairy-free: substitute your favorite dairy-free cream cheese for regular cream cheese. If you want it to be vegan, substitute granulated sugar for honey. 
Make ahead: You can make the blueberry compote a day in advance, then store in an airtight container (mason jars work great) in the refrigerator. Then simply spoon on top of the cream cheese-lathered toast before enjoying.
