Flatbread pizzas are one of my favorite ways to get dinner on the table fast.

I love how versatile they are: they make a delicious appetizer for parties and gatherings, as well as an easy dinner for busy weeknights.

This Barbecue Chicken Flatbread recipe is one that we like to make when we don’t have time to do the full homemade pizza dough.

You just need a few simple ingredients to make this

  • Flatbread – You have a lot of flexibility with the type of flatbread base that you can use in this recipe. Naan bread is our favorite, but you can also use tortilla rounds or focaccia bread. If you make your own flatbread, this is a great recipe for using up leftover flatbread. And, of course, you can also use homemade pizza dough if you want.
  • Chicken – Use cooked chicken — either shredded chicken or chicken cut into cubes. This is a great recipe to use rotisserie chicken leftovers. You can also cook two boneless, skinless chicken breasts and shred or cube the chicken.
  • Barbecue sauce – You can use your favorite BBQ sauce. Or you can use a homemade BBQ sauce recipe.
  • Shredded cheese – Mozzarella cheese is a classic choice, but cheddar cheese and gouda cheese also work well with the barbecue flavors.
  • Fresh vegetables – Classic vegetables like red onion and green bell pepper are great with this barbecue chicken flatbread.
  • Fresh herbs – Finishing the flatbread with fresh herbs like chopped cilantro is the perfect way to add a bit of brightness to each bite. You can also use sliced green onions.

Optional: I like to brush a little olive oil on the top of each flatbread before adding the sauce and toppings. It adds a nice sheen and slight crunch to the pizza crust.

First, preheat your oven to 400°F. You can line a baking sheet with parchment paper if you like.

  1. Place flatbread pizzas on the baking sheet. Spread bbq sauce.
  2. Sprinkle the mozzarella cheese.
  3. Place pieces of chicken on each flatbread.

4. Sprinkle the red onion slices and diced green bell peppers over each flatbread.
5. Bake at 400°F for 12-14 minutes.

What’s the best way to store leftover BBQ chicken flatbread?

Allow the flatbread to cool down, then store in an airtight container in the fridge for up to 3-5 days.

Can I freeze flatbread pizza?

Yes! Allow it cool down, then wrap individual slices tightly in plastic wrap. Then, wrap in aluminum foil. The two layers add a double layer of protection against freezer burn.

How long can I freeze leftover flatbread pizza?

If you use the storage method above, your flatbread pizza should be able to retain its flavor for one to two months. After that, it may still be safe to eat but won’t be as flavorful.

This BBQ chicken flatbread can be served as an appetizer or as a main course.

It’s a delicious Game Day appetizer. Serve it with other tailgating finger foods like Salt and Pepper Wings, Air Fryer Pigs in a Blanket, and tortilla chips with Taco Dip with Ground Beef. Or simply dip it in some tangy homemade ranch dressing.

If serving it for dinner, add on side dishes like Air Fryer Corn Ribs, BLT Pasta Salad, and Garlic Parmesan Knots.

Ingredients 

  • 4 flatbread rounds
  • 1 cup barbecue sauce
  • 2 cups shredded Mozzarella cheese
  • 8 ounces shredded or cubed chicken meat
  • ½ cup sliced red onion
  • ½ cup diced green bell pepper
  • ¼ cup chopped cilantro

Instructions 

  • Preheat oven to 400°F. Line two baking sheets each with parchment paper.
  • Place flatbreads on top of the parchment paper.
  • Spread about 3 tablespoons of barbecue sauce on top of each flatbread.
  • Sprinkle an even amount of cheese over each.
  • Add chicken, red onion, and bell pepper.
  • Bake at 400°F for 12-14 minutes, until the cheese is melted.
  • Garnish with cilantro before serving.
