Ingredients 

Tzatziki

  • 1 cup plain Greek yogurt
  • 1 cup shredded cucumber, with excess liquid squeezed out between paper towels
  • 3 Tablespoons freshly squeezed lemon juice
  • 2 garlic cloves, minced
  • ½ teaspoon kosher salt

Chicken salad

  • 4 cups shredded chicken
  • ¼ cup finely diced red onion
  • ¼ cup chopped Kalamata olives
  • ½ cup crumbled feta cheese
  • 2 Tablespoons chopped fresh parsley

Instructions 

  • In a large bowl, whisk together the yogurt, cucumber, lemon juice, garlic, and salt.
  • Add the chicken, red onion, olives, cheese, and parsley. Toss together to combine until the chicken is well coated in the Tzatziki dressing.

Notes

Makes approximately 4 chicken salad sandwiches.
