Tzatziki Chicken Salad
This Mediterranean chicken salad is delicious served in a pita as a sandwich, over greens as a salad, or over crostini or crackers as an appetizer.

Ingredients
Tzatziki

plain Greek yogurt
1
cup
shredded cucumber, with excess liquid squeezed out between paper towels

freshly squeezed lemon juice

garlic cloves, minced

kosher salt
Chicken salad

shredded chicken

cup
finely diced red onion

cup
chopped Kalamata olives
½
cup
crumbled feta cheese

chopped fresh parsley
Instructions
In a large bowl, whisk together the yogurt, cucumber, lemon juice, garlic, and salt.
Add the chicken, red onion, olives, cheese, and parsley. Toss together to combine until the chicken is well coated in the Tzatziki dressing.
Notes
Makes approximately 4 chicken salad sandwiches.
Storage
: store chicken salad in an airtight container in the refrigerator for up to 4-5 days.
