Growing up, my Lola would make Spamsilog often. Not just for breakfast, but for lunch and dinner, too! I loved it so much and now make Spamsilog as a special breakfast for my own family from time to time.

It wasn’t until I was older that I came to realize that Spamsilog is just one of many silog breakfasts. This longganisa version is just as delicious, and a nice way to enjoy similar flavors in a different way.

🍚 What is a silog meal?

Longsilog is one version of the silog meal, popular in the Philippines. Silog meals are heavy, satisfying, big meals. They are usually enjoyed for breakfast, but they are great for lunch and dinner, too.

These traditional Filipino breakfasts that have a protein, fried egg, and garlic rice. In Filipino restaurants, you can find longsilog, tapsilog, spamsilog, and dasilog, and tosilog.

The first part of the silog meal name changes depending on the protein you use. So tapsilog is made with beef, spamsilog is made with spam, dasilog is made with fried fried milkfish, and tosilog is made with a Filipino cured pork known as tocino.

In the middle, is “si” which stands for “sinangag” – or Filipino garlic rice.

The “itlog” portion of the name of this dish comes from the Filipino word for egg.

You just need three ingredients to make these breakfast plates!

Longganisa – Sometimes spelled longanisa and longaniza, this is a native sausage to the Philippines that you can find in most Asian supermarkets. It’s sweet, salty, and full of flavor compare to other sausages.

Sinangang – This is a Filipino garlic rice that’s aromatic and usually fried. We love to make Instant Pot Garlic Rice, which uses less cooking oil and is a little healthier. You can use white rice or light brown rice if you prefer. Day old rice is often the best for making fried rice, but you can use freshly made rice as well.

Eggs – Eggs are usually served fried and sunny side up with silog meals. But you can also scramble them, serve hard-boiled eggs, or poached eggs. It’s up to you! But there’s something so decadent about a slightly runny egg split open over the garlic rice and enjoyed with sweet sausage.

✅ Step-by-step instructions

  • Add oil to a large non-stick skillet over medium heat. Add the longganisa sausages and cook for about 3-4 minutes on each side, until the longganisa is browned all around and fully cooked through. Transfer to a plate and set aside.
  • Break the eggs over the skillet and cook sunnyside up. Or, flip the eggs and cook until over easy, over medium, or over well — whatever each person prefers. Transfer eggs to a plate.
  • Set out four plates and add a serving of Sinangag (Instant Pot Garlic Rice), one egg, and 2-3 longganisa sausages. Enjoy!
