When the weather heats up, however, we love to throw some lamb on the grill for quick and easy meals.
This Greek Lamb Chops recipe is so simple yet mouthwateringly delicious. I've been so excited to share this recipe with you all and can't believe it's taken me this long!

- Lamb - If you can't find separated lamb chops, you can buy a rack of lamb and use a sharp knife to cut out lamb chops by slicing between the bones.
- Herbs and spices - This marinade has a combination of truly simple ingredients that are easy to find in any grocery store: fresh garlic, dried oregano, olive oil, lemon juice, and salt and pepper.

- In a large bowl, whisk together the marinade ingredients.
- Coat the lamb chops in the marinade sauce, then place in an airtight container, cover, and marinate in the refrigerator for at least 30 minutes and up to overnight.
- Remove the lamb from the refrigerator about 30 minutes before you start grilling.
- Over a medium-high heat, lightly brush the grill or grill pan with some olive oil, then grill the chops for a total of 3-4 minutes on each side, or until the lamb reaches your preferred level of doneness (see below)
How you know lamb is done cooking: lamb is done when a meat thermometer shows an internal temperature of 145°F for medium-rare or 160‚F for medium.

When it comes to wine pairings, often the phrase "what grows together goes together" is a good safe bet. In this case, a Greek red wine such as Xinomavro would pair deliciously with the Mediterranean flavors of these Greek lamb chops.
If you can't find a bottle of Xinomavro nearby, a Syrah would both a food-friendly pairings for this dish.

Greek Lamb Chops
Equipment
- 1 Cast Iron Skillet or Grill Pan
Ingredients
- 8 lamb chops
Marinade
- ¼ cup extra virgin olive oil, plus 1 Tablespoon for cooking
- 1 freshly squeezed lemom
- 4 garlic cloves, minced
- 2 teaspoons dried oregano
- 1 teaspoon kosher salt
- ½ teaspoon ground black pepper
- optional: chopped parsley or rosemary for garnish
Instructions
- Using a paper towel, dry the lamb chops.
- In a large bowl, whisk together ¼ cup of olive oil, lemon juice, garlic, oregano, salt, and pepper.
- Add the lamb and cover, placing in the refrigerator to chill for at least 30 minutes up to overnight.
- 30 minutes before cooking, take the marinated lamb chops out of the refrigerator and rest on the kitchen counter.
- Heat your cast iron skillet or grill pan to medium-high.
- Add olive oil. Once oil is hot, add 4 lamb chops to the skillet or grill pan, and cook for 3-4 minutes each side. Transfer to a plate, then repeat with the remaining lab chops.
- Allow the meat to rest for 5 minutes before serving. Garnish with chopped parsley and/or rosemary if you wish.
