Ingredients 

  • 1 can (15 ounce) black beans, drained and rinsed
  • cups fresh or frozen corn
  • 1 red pepper, diced
  • 1 jalapeňo, sliced (and seeds removed if you don't want spice)
  • ¼ cup diced red onion
  • 1 garlic clove, minced
  • ¼ cup lime juice, (about the juice of two limes)
  • ¼ cup fresh chopped cilantro
  • ½ teaspoon kosher salt

Instructions 

  • In a large bowl. toss together all of the ingredients until well combined.
  • You can serve immediately, or cover and refrigerate for at least 15 minutes before serving.

Makes approximately 8 servings.
