    • Cream cheese - Adds creaminess and helps bind the truffles. Be sure to use full-fat cream cheese for a rich, velvety texture. Note: I have not tested this recipe with dairy-free cream cheese yet, so I can't guarantee whether it will work or not with that option.
    • White chocolate: Melted white chocolate is used to coat the truffles, adding a satisfying crunch.
    • Biscoff cookie butter spread: Most grocery stores in the US sell Biscoff cookie butter in small jars, either in the cookie aisle or in the peanut butter aisle. You can also buy it online. I love the added flavor, creaminess, and richness the spread brings to the truffles.

    ✅ Step-by-step instructions

    You'll find the full list of ingredients with measurements, along with detailed instructions, in the printable recipe at the bottom of this post. But here is a recipe overview along with step-by-step photos to show you how to make these easy no-bake truffles.

    1. Crush the Cookies: Place Biscoff cookies in a food processor and pulse until finely ground.
    2. Mix: Add the softened cream cheese and Biscoff cookie butter spread and pulse until well combined.

    3. Form Truffles: Roll the mixture into 1-inch balls and place them on a parchment-lined baking sheet.

    4. Chill: Freeze the truffles for 20-30 minutes to firm up.

    5. Dip in white chocolate: Melt the white chocolate and dip each truffle, coating evenly.

    6. Decorate: Place the dipped truffles back on the baking sheet. Melt the other two tablespoons of Biscoff spread in the microwave, just until melted, about 15 seconds. Drizzle melted Biscoff spread over and top with remaining reserved crushed Biscoff cookie crumbles before the chocolate sets.

    7. Chill again: Refrigerate the truffles until the chocolate is fully set, about 30 more minutes.

    Can I use another type of cookie instead of Biscoff?

    You can substitute graham crackers or gingersnap cookies, but the distinct spiced flavor of Biscoff will be lost.

    How do I keep the truffles from falling apart when dipping in chocolate?

    The reason we chill the truffles for at least 30 minutes before dipping them is to help them hold their shape. Make sure you don't skip this step! If your truffles are still too soft to dip, you can place them in the freezer for a few minutes before dipping.

    Absolutely! They can be made up to a week in advance and stored in the fridge.

    Ingredients

    Truffle Filling

    • 1 package Biscoff cookies
    • 2 Tablespoons Biscoff cookie spread
    • 6 Tablespoons cream cheese, softened at room temperature

    Truffle Shell and Decoration

    • 12 ounces white chocolate candy melts or chopped white chocolate
    • 2 Tablespoons Biscoff cookie spread

    Instructions

    • In a food processor, pulse Biscoff cookies until they form fine crumbs. Set aside 2 Tablespoons of crumbs in a small bowl and set those aside.
    • Add Biscoff spread and cream cheese to the remaining Biscoff cookie crumbs in the food processor and pulse until well combined, scraping down the sides with a spatula as needed.
    • Transfer the mixture to a bowl and chill in the refrigerator for at least 30 minutes.
    • Scoop out the chilled mixture and roll each into 1-inch truffle balls. Place onto a baking sheet lined with parchment paper. Chill in the refrigerator for 30 more minutes.
    • Just before the 30 minutes is up, place the white chocolate melts (or chopped white chocolate) into a large microwave safe bowl and microwave in 30-second intervals until melted, whisking smooth.
    • Remove the chilled truffles from the refrigerator. Using two forks, dip into the melted white chocolate to coat on all sides, shake off excess chocolate, and place back onto the parchment paper-lined baking sheet.
    • In a microwave safe bowl, melt the Biscoff spread just for about 15 seconds, to soften the spread. Place in a ziplock bag with tiny opening cut in one corner, or add to a small piping bag. Drizzle the melted Biscoff spread over the coated truffles. Sprinkle some of the reserve cookie crumbs over the top. Repeat with remaining truffles.
    • Chill the truffles in the refrigerator for at least 30 more minutes and up to overnight.

    Makes approximately 36 truffles.
    Storage: store in an airtight container in the refrigerator for up to one week.
    Freeze: store in a freezer bag or freezer safe airtight container for up to 2 months.
