Butter – Use a stick of unsalted butter. Make sure it’s softened to room temperature. It needs to be soft enough to mash with the herbs and seasonings.

Sun-dried tomatoes – You’ll want to finely chop sun dried tomatoes into small pieces that mix well with the butter and herbs. You don’t want any large pieces that would make it difficult to slice the butter.

Fresh herbs – Chopped fresh parsley, rosemary, and basil add bright flavors to this butter.

Seasonings – A little bit of kosher salt and ground black pepper balance out the flavors. You can use sea salt instead of kosher salt if you prefer.

  1. In a medium bowl or small bowl using a fork, mash down the softened butter.
  2. Add the remaining ingredients to the bowl and mash together with the fork until well combined.
  3. Form the butter mixture into a log shape.
  4. Wrap the homemade butter log with parchment paper.
  5. Label the parchment paper.

You can use it right away, or refrigerate or freeze for later.

If you’re going to be using the butter soon, you can wrap it in parchment paper and store in the refrigerator for up to 5 days. Otherwise, wrap in parchment paper, plastic wrap, or wax paper, place into a freezer bag, label, and store in the freezer for up to 6 months.
