    We love fried rice in our house. I grew up eating some kind of variation of fried rice most of my list, and now my kids love it too.

    From Spam Fried Rice to Shrimp and Chicken Fried Rice, we love making this beloved dish because it's so easy to make and incredibly versatile.

    And when you add succulent lobster to the mix, it transforms from a simple comfort food into an elegant meal perfect for special occasions.

    • Lobster - The star of the show! You can find lobster pieces at your local grocery store's seafood and meat department. This is lobster that has already been chopped into bite-sized pieces. You can also cook lobster tails (try our Air Fryer Lobster Tail recipe), then chop the meat into even pieces.
    • Rice - The best rice to use in fried rice is day-old jasmine rice, basmati rice, or any long-grain rice.
    • Vegetables - For fried rice, I usually add diced carrots and peas. But you can also add chopped broccoli, snap peas, diced bell peppers, or corn. These add crunch and sweetness.
    • Aromatics - fresh garlic clove, yellow onion, and minced fresh ginger add depth of flavor.
    • Soy sauce - Use low sodium soy sauce or coconut aminos to add richness of flavor. You can also add a bit of hoisin sauce or oyster sauce for even more umami flavor.
    • Herbs - finish off the fried rice with thinly sliced green onions (AKA scallions) and a handful of fresh cilantro or fresh parsley, chopped for garnish.
    • Oil - Use olive oil, vegetable oil, or sesame oil for cooking.
    • Egg - You'll need two large eggs for this fried rice recipe.
    • Salt & pepper - season the rice to taste with kosher salt and ground black pepper before serving.

    ✅ Step-by-step instructions

    1. Cook the rice according to package directions.
    2. Heat the oil in a wok (or large skillet) over medium high heat, add the vegetables, onions, garlic, and ginger, and stir fry for a couple of minutes.

    3. Add the lobster meat. Stir fry for a couple of minutes.

    4. Create a well in the center of the lobster vegetable mixture and pour in the beaten eggs. Use a wooden spoon to quickly scramble the eggs in the center, taking care not to bring in too much of the rice and vegetables into the center until the eggs are mostly scrambled. Then stir the scrambled eggs to mix with the veggies.

    5. Add the rice and stir to combine.

    6. Add sliced green onions. Garnish with parsley and more green onions and season with salt and pepper to taste before serving.

    Tips for Perfect Fried Rice

    • Use Cold Rice: Day-old rice is ideal as it’s less sticky and holds up better during stir-frying.
    • High Heat: Cooking on high heat helps achieve that desirable wok hei (breath of the wok) flavor and a slightly crispy texture.
    Can I use fresh or frozen lobster for this recipe?

    Yes, both fresh and frozen lobster can be used. If using frozen lobster, make sure it is fully thawed and drained before cooking. Fresh lobster will give the best flavor, but frozen is a convenient alternative if fresh is not available.

    Why is day-old rice better for fried rice?

    Day-old rice is drier and firmer than freshly cooked rice, which helps prevent the fried rice from becoming mushy. The grains are less likely to stick together, allowing for better texture and flavor distribution.

    It's also a delicious side dish that goes well with other Asian inspired dishes. Try serving it with Filipino Adobo Chicken Wings for a delicious family dinner at home. Or serve it alongside Thai Lemongrass Chicken.

    Equipment

    • 1 Large Wok or Large Skillet with High Sides

    Ingredients

    • 1 cup uncooked white rice OR 3 cups leftover cooked white rice
    • 2 Tablespoons vegetable oil
    • ½ small onion, finely diced
    • 3 garlic cloves, minced
    • 1 teaspoon minced ginger
    • ½ cup chopped carrots
    • ½ cup frozen peas
    • 6 ounces lobster meat
    • 2 large eggs, lightly beaten
    • ½ teaspoon kosher salt
    • ¼ teaspoon ground black pepper
    • 1 teaspoon oyster sauce
    • 1 teaspoon soy sauce
    • 1 Tablespoon thinly sliced scallions for garnish
    • 1 Tablespoon finely chopped parsley for garnish

    Instructions

    • If using uncooked rice, cook 1 cup according to package directions.
    • In a wok or a large skillet with high sides, add vegetable oil.
    • Add onion, garlic, ginger, carrots, and peas. Stir continuously with a wooden spoon, cooking for about 2 minutes, just until the vegetables are slightly softened and the garlic and onions are fragrant.
    • Add the lobster meat and stir fry for 1-2 minutes.
    • Create a well in the center of the pan and add the lightly beaten eggs. Stir rapidly and continuously for about 2-3 minutes with a wooden spoon to scramble the eggs.
    • Add the cooked rice, oyster sauce and soy sauce, and toss together to coat the ingredients. Use the wooden spoon to break up the rice. Cook for about 2 to 3 minutes.
    • Salt and pepper. Taste, and season more as needed.
    • Garnish with sliced scallions and chopped parsley, and serve.

    Notes

    Makes approximately 4 servings.
    Rice: Use a long-grain white rice for this recipe. Basmati Rice and Jasmine Rice are great for fried rice. Using 3 cups of cooked rice it leads to a crispier fried rice. But you can cook 1 cup of uncooked white rice while making the rest of the fried rice. Just be sure you thoroughly rinse the rice before cooking to release excess starch.
    Substitutions:
    • For the cooking oil, you can use any neutral oil such as vegetable oil, canola oil, coconut oil, or avocado oil.
    • For the veggies, you can use any combination of your favorites, but keep the same measurements. Try snap peas, green beans, corn, broccoli, cabbage.
    Storage: Allow to cool, then store in an airtight container in the refrigerator for up to 5 days.
    Freeze: You can freeze fried rice. Store in a freezer safe container in the freezer for up to 1 month. Thaw completely in the refrigerator overnight.
