Spring Toast Week continues!

So far I’ve shared a sweet Blackberry Citrus Ricotta Toast recipe and a savory Spring Scramble on Toast recipe. After a break from toast yesterday to share a Wine Wednesday feature on a new collab – the Hi-Lo Cuvée wines by Chehalem Winery – I’m back today with a lovely new toast recipe.

Are you normally a coffee person or a tea person?

Most people, I find, are one or the other. I love coffee, but I can get down with tea from time to time, especially if it’s a really good tea like my favorite Lord Bergamot from Portland-based Smith Teamaker.

When I’m in the mood for tea, this is the toast that I long for.

With a goat cheese base, sprinkled walnuts and delicate lavender petals, and sweet honey drizzle, this is definitely a more grown-up toast recipe.

I like to call it one of my Mom Recipes – the ones that I make just for me, when the kids and hubby aren’t around, so I can indulge with a heaping cuppa soothing hot tea and put my feet up for a bit while catching up on some reading.

Those kind of alone times are few and far between these days. I don’t talk about motherhood as often on this blog anymore, and I suppose that’s what happens when you move from the very public little kid phases to the more private dramas of raising a tween and teenager. Motherhood takes on a whole higher level of mental and emotional difficulty and heartache – the worries are more intense and the consequences more dire in this stage. And the kids? Well, they deserve to deliver the narrative of their life stories; they are no longer just our stories to tell.

So when I can, in the madness and mayhem of work, wife, and mom life, I sit down for a few minutes with a big cup of piping hot coffee or fully caffeinated tea, and this beautiful grown-up goat cheese toast.

It’s like a delicious, graceful wave of calm in the storm of older kid mothering.

Honey Walnut Lavender Goat Cheese Toast Recipe

This toast is also beautiful and elegant enough to serve at baby showers, bridal showers, picnics, and would be a lovely addition to any brunch.

If you are serving a crowd, I would cut up the slices into quarters and serve as tea sandwich-size toast bites!

Honey Walnut Lavender Goat Cheese Toast

Honey Walnut Lavender Toast is an elegant, sweet treat to serve with afternoon tea, or even at bridal & baby showers.

Ingredients 

  • 4 slices whole grain bread (you can use any hearty bread)
  • 4 tbsp goat cheese
  • 4 tbsp honey
  • 2 tbsp chopped walnuts
  • 1 tsp dried culinary lavender flowers

Instructions 

  • Lightly toast 4 slices of bread. 
    Spread about 1 tablespoon of goat cheese evenly on each slice.
    Drizzle about 1 tablespoon of honey evenly over each slice.
    Sprinkle about ½ tablespoon chopped walnuts evenly over each piece of toast.
    Sprinkle just a few dried culinary lavender flowers over each slice. A little goes a very long way!
    Serve and enjoy immediately.
