While store-bought pie crust is a great solution in a pinch, it doesn’t come close to the flavor, texture, and quality of homemade pie dough.

And, making pie dough from scratch is easier than you think! I’ve tried and tweaked a lot of different homemade pie crust recipes over the years. And this easy food processor pie dough recipe is my absolute favorite.

This easy pie crust recipe works for so many reasons.

  • Simple ingredients – You only need a handful of simple ingredients that you probably already have on hand. If not, these are all ingredients you can easily find at your local grocery store.
  • Food processor – The food processor does a lot of the work for you. So easy!
  • Rich flavor – This homemade pie dough is so buttery and tender. The most delicious base for your baked goods.
  • Freezer-friendly – This is a great recipe to double so that you have one to use right away and you can freeze the other for another time.

You can make pie dough with just a few ingredients.

  • Flour – This recipe calls for all-purpose flour. I have not tested it with any other type of flour, so I can’t guarantee any other type of flour would work. But if you do try a substitution, like gluten free flour or wheat flour, please leave a comment and let us know how it turned out!
  • Sugar – Granulated sugar adds a touch of sweetness, enhancing the flavor of the crust. It also encourages browning, giving the dough a lovely golden brown sheen when it bakes.
  • Salt – Kosher salt balances the sweetness from the sugar.
  • Butter – Use cold, unsalted butter and cut it into small cubes.
  • Egg – Lightly beat a large egg. Eggs add richness to the dough and also help bind the dry ingredients together.
  • Vinegar – I swear by adding vinegar to my pie dough! It acts as a mild preservative and helps prevent the dough from being overworked and getting tough.
  • Water – You’ll mix ice cold water and vinegar with the egg.
  • Egg wash – Lightly beat a second egg with a little water to create an egg wash. You will use this to brush on the dough before it bakes.

✅ Step-by-step instructions

Here are some step-by-step photos to show you just how easy it is to make pie dough in a food processor. Find ingredient measurements and detailed instructions in the printable recipe card at the bottom of this post.

  1. In a small bowl, whisk together the first egg, vinegar, and ice cold water.
  2. Add the flour, salt, sugar to a food processor. Pulse to combine.
  3. Add the cubes of butter to the food processor. Pulse to combine.

4. Slowly add the egg/vinegar/water mixture into the food processor and

5. Continue to pulse to combine, until the dough starts to come together.

6. Remove the dough from the food processor and form a disc. Wrap well in plastic wrap and chill for at least 30 minutes up to overnight before rolling out and using.

Do I have to include vinegar in the dough?

While vinegar can be left out of the recipe, I have found it to make a difference in the dough. I now never make my dough without vinegar.

Can I freeze homemade pie dough?

Yes! Wrap in plastic wrap and then place into a freezer bag and freeze for up to two months.

Ingredients 

Instructions 

  • In a small bowl, whisk together the egg, white vinegar, and water. Set aside.
  • In a food processor, add the flour, sugar, salt. Pulse to combine.
  • Gradually add the butter cubes and continue pulsing until the butter is well incorporated.
  • Pour in the egg/vinegar/water mixture and pulse to combine all ingredients and create the dough.
  • Shape the dough into a disc, wrap in plastic wrap, and refrigerate for at least 30 minutes up to overnight before using.

Makes enough for one (1) 9-inch pie (approximately 8-10 slices)
Storage: store in the refrigerator for at least 30 minutes or up to 24 hours before using.
Freeze: You can freeze the dough in a freezer-safe airtight container or in a freezer bag for up to 2 months. Thaw in the refrigerator before using.
