Chicken Caesar Salad Wrap

Ingredients
Caesar dressing
- ¾ cup mayonnaise
- ¼ cup shredded parmesan cheese
- 2 Tablespoons fresh lemon juice
- 2 Tablespoons extra virgin olive oil
- 2 teaspoons Dijon mustard
- 2 garlic cloves, finely minced
- ½ teaspoon kosher salt
- ¼ teaspoon black pepper
Wrap
- 2 cups cooked chicken
- 3 cups chopped romaine lettuce
- optional: croutons
- 4 large tortillas
Instructions
- In a large bowl, whisk together all of the dressing ingredients until smooth.
- Add the chicken, romaine lettuce and, if using, croutons, to the bowl with the dressing. Toss well to coat all of the ingredients.
- Place tortillas on a large plate. Spoon filling onto one side of the tortilla and roll up tightly, wrapping like a burrito. Secure the sides with toothpicks if you like.
