  • Potatoes – Russet potatoes tend to work best for this sheet pan recipe. But you can also use red potatoes, baby potatoes, or Yukon gold potatoes.
  • Olive oil – Use your best extra virgin olive oil for the potatoes.
  • Garlic – Fresh minced garlic cloves add so much flavor to these potatoes. But you can substitute garlic powder if you don’t have fresh garlic.
  • Seasonings – For the potato seasoning, you need a mix of ground paprika, chopped fresh rosemary, kosher salt and ground black pepper. You can also use a mix of your favorite herbs. Try fresh herbs like basil, oregano, and/or thyme for an Italian seasoning flavor. While fresh is best, you can substitute dried herbs if that’s what you have on hand. You can also garnish with a bit of chopped fresh parsley.

  1. In a large bowl. toss the chopped potatoes with the olive oil.
  2. Add the garlic, paprika, rosemary, salt, and pepper.

3. Toss to coat the potatoes in the seasonings and olive oil.
4. Place seasoned potatoes onto a sheet pan lined with parchment paper. Bake at 400°F for 40-50 minutes, flipping the potatoes halfway through. Bake until the potatoes have a golden brown crust and reach your desired level of crispness.

  • Preheat oven to 400°F. Line a baking sheet with parchment paper.
  • In a large bowl, combine all of the ingredients. Toss together until the potatoes are well coated with the olive oil and seasonings.
  • Bake at 400°F for 40-50 minutes, flipping the potatoes over halfway through. Bake until the potatoes are cooked to your preferred level of doneness.
