May is always a busy month, but this year, it's super cray cray, y'all.
My daughter is busy with softball, which has had an unpredictable schedule this season, but is at least three times each week. My son is busy with band and after school activities, tons of big end-of-year projects, and a spring concert coming up.
On the work front, it's super organized chaos. I've taken on new social media, recipe development, and photography clients (yay!), while also taking on more blogging clients (love them!). Meanwhile, my existing client workload is already heavy this year. I am working 24/7. All the time. Good thing I love it so much ;)
In personal news, I'm trying to train for my first Spartan race and a half-marathon relay this summer, which is all SO crazy. Who would have thought: me, doing an obstacle race and a 10K?
Life is busy, terrifying, and exciting all at once – which is kind of how I like it.
All this to say: I've had to rethink my breakfast game lately. I need meals that can fuel me up for the day, but that are also SUPER fast and easy.
I've been meaning to make overnight oats for years, and after experimenting a bit with different recipes I found online, I tried one from Tasty Ever After that had peanut butter & chocolate in it. I played around with it and tweaked it a bit to my taste - and I hope you will love it too!
Chocolate Peanut Butter Overnight Oats

This Chocolate Peanut Butter Overnight Oats recipe is so satisfying. It's packed with yummy nutritious ingredients like chia seeds, oats, honey, and peanut butter. The cocoa nibs give it a lovely little crunch and added chocolate boost without going overboard.
The thing I've learned about overnight oats, is that everyone has a different preference: some like them creamier, some chunkier. Some people want them sweeter than others. So what's great about this, is that you can totally customize this recipe to your personal taste!
Topping ideas

- Raspberries
- Strawberries
- Bananas
- More cocoa nibs
- Slivered almonds
- Crushed peanuts
- Drizzle of extra honey
- Chocolate chips
- Crushed graham crackers
I prefer fresh fruit and a few extra cocoa nibs with this Chocolate Peanut Butter Overnight Oats recipe.
I use a large mason jar, but you can also make this in a plastic or glass airtight leftover container. I've found that this makes about 3 individual servings, but again, that depends on how much you want to eat each day.
The best part about this recipe is how EASY it is.
Mix all of the ingredients up in a big bowl (takes 5 minutes - love that!), chill overnight, then eat the next morning. I'm actually eating some right now as I type this up and am ready to take on the day - and the rest of this crazy month!
Chocolate Peanut Butter Overnight Oats Recipe
Chocolate Peanut Butter Overnight Oats
Ingredients
- 1 cup coconut milk almond milk, or cashew milk
- 1 teaspoon vanilla extract
- 1 teaspoon honey
- 1 tablespoon cocoa powder
- 2 tablespoons peanut butter
- 2 teaspoons cocoa nibs
- 2 teaspoons chia seeds
- ½ cup rolled oats
- optional toppings: more cocoa nibs blueberries, raspberries, bananas
Instructions
- Stir all ingredients together in a large bowl.
- Pour into a large mason jar, or airtight container. Cover and refrigerate overnight, or for at least six hours.
- When you're ready to eat, simply open up the mason jar or other container and top with any additional toppings you wish. Spoon up and enjoy!

Make ahead breakfasts are awesome. I am not a breakfast person, but I do know it is important to start you day with a nourishing meal. If I don't have to think about it in the morning...all the better. Chances are if it is ready and waiting for me, I can grab and go!!

I love how you mentioned customizing this recipe. Most overnight oat recipes sound amazing, but are WAY too sweet for me to handle. This one however, sounds purely delightful. Plus, my husband who is an avid cyclist and peanut butter lover, would hug me all day for making this!
