    Happy Friday! I'm so glad the weekend is here. What big plans do you all have this weekend?

    My husband is running another obstacle race tomorrow - the Terrain Race in Sherwood, Oregon. I'm so glad he's found a love of these obstacle races, and it's been great being able to work out with him over the past year. It's almost been exactly a year since we found the one gym that finally feels like home.

    I used to hate gyms - and working out. I now know that it just takes trying them on until you find the right one. I love our gym and all of the wonderful people there. In fact, I've signed up for my own first obstacle course race: the Spartan Sprint in Portland later this summer. I'm so nervous but really motivated!

    Along with working out regularly I've been trying to focus on food that fuels with calories that count. For breakfast, I've been making more overnight oats. And for snacks, I've been making protein bars and energy bites.

    Since I also seem to be on a chocolate + peanut butter combo kick lately, I thought I'd share my latest recipe for Chocolate Peanut Butter Energy Balls!

    You've likely seen different recipes for protein balls and energy bites all over Pinterest and Facebook lately. I've been tweaking different recipes, and this is the one that I've come to like the most.

    It only requires 7 ingredients, and most of them you probably already have in your pantry.

    Chocolate Peanut Butter Energy Balls

    This recipe has two ingredients that I've been loving adding to different dishes lately, but decided that I like both in this one: chia seeds and flaxseed.

    Chia seeds are an excellent source of:

    • Fiber, which promotes regularity and supports your digestive tract and healthy lipids
    • protein, to fuel your body and mind all day long!
    • Omega 3s
    • antioxidants

    Flaxseed is an excellent source of:

    • Omega 3 fatty acid Alpha-Linolenic Acid (ALA), which helps maintain healthy hair, skin, and nails

    • fiber

    Like my Chocolate Peanut Butter Overnight Oats recipe, you can easily customize this recipe to your personal taste.

    Mix-in ideas:

    • coconut flakes
    • chopped peanuts, almonds, pecans
    • bananas
    • dried fruit

    This recipe makes approximately 15-18 energy bites. If you're not going to eat them all within 3-4 days, simply put them in a freezer-safe container and freeze. Then, when you're ready to eat, just take them out and thaw them in the refrigerator for an hour or so.

    Ingredients

    • ½ cup oats
    • ½ cup peanut butter
    • ½ cup dark chocolate chips
    • 2 Tablespoons agave nectar
    • 2 Tablespoons cocoa powder
    • 1 Tablespoon chia seeds
    • 1 Tablespoon flaxseeds

    Instructions

    • In a large bowl, mix all of the ingredients together.
    • Refrigerate for 10-15 minutes.
    • Remove from refrigerator and roll into small balls.
    • Keep refrigerated until ready to eat, for up to 5 days.

    Notes

    Storage: Store energy bites in an airtight food storage container in the refrigerator for up to 5 days. You can also freeze these energy bites in a freezer-safe container or freezer bag for up to one month.

        These look too good to be so nutritious! LOL I know better, though, because those ingredients are powerhouse ones. If these were the reward for a good workout, I'd be tempted to go the distance! As it is, I don't run, not even to catch a bus. LOL
