Tomatoes - The key to delicious flavors in this chicken bruschetta recipe is choosing the best tasting tomatoes. I love the flavor and color of Roma tomatoes (also known as plum tomatoes), but you can also use any tomatoes "on the vine," San Marzano tomatoes, or beefsteak tomatoes. Really, you can use any tomatoes you have on hand, but the fresher they are, the better this dish will taste!
Onions - The recipe calls for red onions, but you can also use shallots instead if you want a milder onion flavor. Be sure to dice the red onion finely, since this will be eaten raw and biting into a big piece of red onion can blast out your tastebuds.

Chicken - Use four chicken breasts for this recipe. If you have any that are thicker than the others, you'll want to pound them flat until they are all about the same thickness. This helps them cook evenly.

- In a large bowl, toss together the tomatoes, garlic, onions, basil, olive oil, balsamic vinegar, salt and pepper. Toss together until well combined. Set aside.
- Season the chicken on both sides with salt and pepper.
3. Add 2 tablespoons of olive oil to a large skillet over medium-high heat. Once heated up, add the chicken breasts.
4. Cook for 4 to 5 minutes, turning halfway through to cook both sides evenly.
5. Just when the chicken is about to be done to your liking, add one cheese slice on top of each piece of chicken. Cook for about 1 to 2 minutes, just until the cheese starts to melt.
6. Remove the cheese-topped chicken from the skillet and transfer to a plate.
7. Top with the tomato bruschetta mixture.
8. Garnish with drizzled balsamic vinegar and additional sliced basil, if desired.

Ingredients
Bruschetta topping
- 2½ cups diced Roma tomatoes (about 4 to 5 tomatoes)
- 4 garlic cloves, minced
- ¼ cup finely chopped red onions
- ½ cup thinly sliced basil leaves
- 2 Tablespoons olive oil
- 1 Tablespoon balsamic vinegar
- ½ teaspoon kosher salt
- ¼ teaspoon ground black pepper
Chicken
- 4 chicken breasts (about 2 pounds total)
- 2 Tablespoons olive oil
- 1 teaspoon dried oregano
- 2 garlic cloves, minced
- 4 slices mozzarella cheese
- Optional: additional balsamic vinegar and basil leaves for garnish.
Instructions
- In a large bowl, toss together the tomatoes, garlic, onions, basil, olive oil, balsamic vinegar, salt and pepper. Toss together until well combined. Set aside.
- Season the chicken on both sides with salt and pepper.
