  • Shredded cheese – A melty blend like mozzarella, cheddar, Monterey Jack, or a mix adds gooey richness. Use what you love or what’s in the fridge.

  1. Place two flatbread onto a parchment-paper lined baking sheet.
  2. Brush each with olive oil.
  3. Top with sprinkled shredded cheese.

4. Top with partially-cooked bacon.
5. Use a spoon to create gentle indentations into the flatbread where you want the eggs to go. This helps create a little nest to help hold the eggs so they don’t spill over the sides of the flatbread (but if they do, it’s totally okay!).
6. Crack two eggs over each flatbread.
7. Bake. Then sprinkle fresh chopped parsley. Enjoy!

Ingredients 

  • 2 large flatbread, naan bread works well
  • 1 Tablespoon olive oil
  • 4 ounces shredded cheese, cheddar, mozzarella, or a mix works great!
  • 4-6 slices bacon, cooked partway and chopped
  • 4 large eggs
  • 1 Tablespoon fresh chopped parsley

Instructions 

  • Preheat the oven to 400°F. Line a baking sheet with parchment paper.
  • Place flatbread on the prepared lined baking sheet.
  • Brush with olive oil.
  • Sprinkle cheese and partly cooked & chopped bacon.
  • Where you would like to add the eggs, use a spoon to gently press into the flatbread, creating four slightly sunken areas to help hold the egg in. However, remember that it's okay for the egg to run off the sides a bit.
  • Gently crack an egg into each sunken area.
  • Bake for 10-15 minutes, or until the eggs are cooked to your liking.
  • Sprinkle with fresh chopped parsley and season with salt and pepper. Then slice each flatbread in half to create four servings.

Notes

Makes 4 servings.
Additional Notes:
  • To save time, you can use chopped pre-cooked bacon. I get this from Costco. 
  • I prefer to use cheddar cheese, but you can use Mozzarella or a blend of cheeses.
  • Optional toppings: diced tomatoes, diced or sliced avocado, a drizzle of chili crisp for some heat, or chopped cilantro.
