This 5-ingredient high protein waffle calls for simple ingredients you probably already have in your kitchen or pantry.

  • Cottage cheese – This makes the waffles so fluffy inside, and adds extra protein. You can use whole milk or 2% milk cottage cheese. I use 2% cottage cheese.
  • Oats – Adds extra protein and nutrition to every bite, and acts as the “flour” ingredient in this recipe. You could use flour instead if you prefer.
  • Eggs – Use three large eggs at room temperature so that they blend quickly and smoothly. Eggs add protein to these cottage cheese waffles and help the ingredients all bind together.
  • Vanilla – A teaspoon of vanilla extract adds that classic bakery aroma and flavor.
  • Maple syrup – Adds an extra little touch of sweetness. You could either substitute honey for the maple syrup or eliminate it completely.

Optional toppings: fresh fruit, maple syrup, whipped cream, chopped pecans or almonds all make delicious waffle toppings.

  1. Add all of the ingredients to a high-powered blender or a food processor.
  2. Blend or process just until smooth.

3. Heat a waffle iron and spray lightly with cooking spray. Once it’s ready, pour some batter into the center, then close the lid.
4. Cook for about 1-2 minutes, just until the waffles reach your desired level of crispness on the outside and are done the whole way through. Our waffle iron has a light that goes from red to green once the waffles have reached the desired level of doneness.
5. Serve with more maple syrup and any other additional optional toppings of your choice.

Recipe Tip

If you want to add in chocolate chips or blueberries, gently fold them into the batter in a large bowl after Step 4. When scooping out batter to place into the waffle iron, try to make sure the chocolate chips or blueberries are spread out so you don’t have a clump in one area of the waffle. This also helps prevent the waffle from burning.

Absolutely! Place cooled waffles into a freezer friendly airtight container or freezer bag and freeze for up to two months. I like to make a batch of these on a Sunday, enjoy half that day, then freeze the rest for the family to enjoy whenever they want.

What’s the best way to reheat leftovers?

From frozen, add directly to a toaster oven and toast until heated through.

Can I double the recipe?

Yes! As is, the recipe makes enough for about 2-4 people. You can double the recipe to serve 4+ people.
