    Chicken pot pie is an iconic, all-American food that is known for being hearty, nourishing, and satisfying. Although there are reports that pot pies originated in ancient Greece, European settlers brought it over to the United States and it became a popular way for Americans to make use of leftover meat and vegetables.

    In the early 20th century, with the advent of the microwave, frozen chicken pot pie further solidified this comforting dish as one of the most popular American comfort food classics.

    And it's still a delicious and easy dinner idea enjoyed by families all over the country today! We make a homemade pot pie when we want a one-pot meal for busy weeknight dinners. But it's also satisfying and hearty enough to make for Sunday supper.

    Here's what you need to make this delicous pot pie:

    • Pie Crust - Store-bought pie crust saves time and energy when making this delicious chicken dinner. However, if you have a few extra minutes, this easy homemade pie dough recipe is absolutely worth it! You'll pre-bake the bottom crust first until it's fully baked (about 5-7 minutes). Then the second crust goes over the top of the filling. See the Substitutions notes for alternatives.
    • Chicken - This is the perfect recipe to use up leftover rotisserie chicken meat! Or you can cook up 2 chicken breasts and cube them.
    • Vegetables - Frozen mixed vegetables save the day in so many dinner recipes, and they help make this air fryer chicken pot pie recipe even faster. Use your favorite 10-ounce package of frozen vegetables; we use one that has corn, peas, and carrots.
    • Cream of chicken soup - To make things faster, this recipe uses one small 10.5 ounce can of cream of chicken soup. See the Substitutions notes below for alternatives.
    • Herbs - You'll need chopped fresh parsley and chopped fresh thyme leaves.
    • Seasonings - Use garlic powder, onion powder, kosher salt, and pepper to boost the flavor of this delicious air fryer chicken pot pie.
    • Egg - An egg wash adds a brilliant sheen and beautifully baked crust. Without it, the pie looks unfinished.

    Substitutions:

    • You can substitute homemade pie crust, puff pastry, or biscuit dough for the pie crust.
    • If you don't want to use cream of chicken soup, you can heat up one cup of chicken broth in a saucepan and whisk in about 2 tablespoons of flour until combined and creamy.
    • You can substitute the cooked chicken with cooked turkey meat, cooked ground beef or chuck meat, or an equal amount of hearty vegetables.

    ✅ Step-by-step instructions

    A full list of ingredients plus detailed instructions are in the printable recipe card at the bottom of this post. Here are detailed step-by-step photos to show you how to make this air fryer pot pie recipe.

    1. Spray an oven safe baking pan with cooking spray or grease with butter. You can also line with parchment paper.
    2. Gently roll out one of the store-bought pie crusts and press into the bottom of the greased pan and up the sides. Use a knife to cut away any excess pie crust around the edges. Use a fork to poke a few holes at the bottom.
    3. Lower the pan into the air fryer basket. I use a silicone sling to make it easier lowering and lifting the pan in and out of the air fryer.

    4. Pre-bake the bottom crust at 350°F for 5-7 minutes, until the crust is baked through. This helps prevent a soggy bottom during the second main cooking time.
    5. In a large bowl, mix together the chicken, cream of chicken soup, vegetables, and all of the seasonings until well combined.
    6. Once the bottom crust is baked, lift the pan out of the air fryer basket and fill the pan with the filling mixture.

    7. Gently roll out the second pie crust over the top of the filling, once again cutting away excess dough. Using the tines of a fork, press down on the dough to seal it around the top edge of the baking pan. Use a small knife to cut 3-5 slits into the top of the pie crurst.
    8. Using a pastry brush, lightly brush the egg over the entire top of the crust.
    9. Bake at 350°F for 15 to 17 minutes, until the top of the crust is a beautiful golden brown.

    Note: if you use a different crust/dough, different filling, or different size pan, that will affect the bake time and you may find you need additional cook time.

    Allow the chicken pot pie to rest for 5-10 minutes before slicing and serving.

    How do I avoid a soggy bottom crust?

    You must bake the bottom crust first on its own in order to help avoid a soggy bottom crust. If you don't bake the bottom crust long enough to where it is pretty much fully baked, once you add the filling, it will make the crust soggy.

    Can I use any other protein besides chicken?

    Yes! You can use cooked turkey meat to make a turkey pot pie. Or make beef pot pie by using cooked ground beef or cooked and cubed chuck meat. You can also make this a full vegetarian pot pie by substituting hearty vegetables for the same amount of chicken. Mushrooms are a great addition to any pot pie!

    What's the best way to store leftovers?

    Store leftover chicken pot pie in an airtight container in the refrigerator for up to 3 days.

    This is an easy meal that can be a complete meal on its own. But it's also delicious served with side dishes like Air Fryer Broccoli, Instant Pot Garlic Mashed Potatoes, or Whipped Sweet Potatoes.

    Add an Arugula and Quinoa Salad or Asian Cucumber Salad for boosted nutritional value.

    For dessert? Complete your dinner table with twists on an all-American dessert like Apple Pie Bars or Cinnamon Pie.

    🍷 🥂 Wine pairings

    🍳 Kitchen tools and equipment

    Ready to make this recipe? Here are the kitchen tools and equipment you'll need:

    • Air fryer - You'll need a larger air fryer, such as an 8-quart or 10-quart air fryer. We make this in our Ninja Foodi multicooker.
    • Baking pan - Any oven safe pan will work, but we prefer to use baking pans that are made specifically to fit our particular air fryer. You can also make mini chicken pot pies in ramekins.
    • Mixing bowl and spoon - You'll need a large mixing bowl and wooden spoon to mix together the filling.
    • Silicone sling - A silicone sling is optional, but I always use one because it makes it easier to lower and lift the pan in and out of the air fryer.

    Making a classic chicken pot pie in the air fryer is easy, fast, and delicious! It's a great weeknight dinner that is hearty and satisfying.

    Equipment

    • 1 Air Fryer
    • 1 Baking Pan

    Ingredients

    • cooking spray
    • 1 package (with 2 rounds) refrigerated pie crusts
    • 3 cups cooked, cubed chicken meat
    • 1 package (10 ounces) frozen Stahlbush Island Farms Classic Mixed Vegetables
    • 1 cup (10.5 ounce can) cream of chicken soup
    • 1 teaspoon garlic powder
    • 1 teaspoon onion powder
    • 2 teaspoons chopped fresh thyme leaves
    • 2 teaspoons chopped fresh parsley
    • ½ teaspoon kosher salt
    • ¼ teaspoon ground black pepper
    • 1 egg, lightly beaten

    Instructions

    • Lightly spray the bottom of an 8-inch baking pan with baking spray or cooking spray. Or, you can line the pan with parchment paper.
    • Gently place one of the pie crust rounds into the pan and gently press the dough up the sides. Use a knife to cut away any excess dough.
    • Place the pan into your air fryer basket and air fry at 350°F for 5-7 minutes, until the crust is just lightly baked.
    • While the bottom crust is air frying, make the filling. In a large bowl, mix together the cooked chicken, frozen mixed vegetables, cream of chicken soup, garlic powder, onion powder, thyme, parsley, salt, and pepper. Stir until well combined.
    • Once the bottom crust is done, use oven mitts to carefully lift the pan out of the air fryer basket and spoon the filling into the pan.
    • Place the second pie crust round over the top and cut away any excess dough.
    • Use the tines of a fork to gently press down around the sides and use a knife to cut four to five 1-inch slits into the top crust.
    • Using a pastry brush, brush the egg wash over the top of the entire crust.
    • Carefully place the pan back into the air fryer basket and air fry at 350°F for 15 to 18 minutes, until the top crust is golden brown.
    • Allow the chicken pot pie to rest for at least 5 minutes before slicing and serving.

    Makes 4-6 servings.

    If using a baking pan: You can use a baking pan that is made specifically for the air fryer, or you can use any baking pan that is oven safe that will fit inside your air fryer. I use an 8-inch pan that is 1.5" deep. You can also use 4-6 ramekins instead.
    If using oven-safe ramekins: skip the bottom crust, grease the insides of each ramekin, add the filling, then use a round cooking cutter to cut out mini pie crust rounds and top each filled ramekin with one pie crust round. Cut 2 slits in the center of each pie crust round. Air fry at 360°F for about 17 minutes. 
    Vegetables: no need to thaw the vegetables -- just add them straight to the filling and mix in. You can thaw them first if you like; the cook time remains the same. 
    Storage: allow the chicken pot pie to cool, then store in an airtight container in the refrigerator for up to 3 days.
