We like to make this with leftover Thanksgiving meat, whether we make spatchcock turkey or air fryer turkey tenderloin. But it's honestly just as delicious with store-bought deli turkey slices!

🛒 Ingredient notes
- Bread: A sturdy everyday sliced loaf (we use our fave whole grain nut bread) works just fine for this recipe. If you plan to use a lot more sauce and/or brie, you could use a thicker loaf.
- Butter: For grilling the sandwich, butter adds richness and helps achieve a golden, crispy crust while preventing the bread from sticking to the pan.
- Turkey slices: Thinly sliced roast turkey - whether freshly cooked, leftover from holiday feasts, or store-bought deli slices - works well for this sandwich.
- Cranberry sauce: Use homemade or store-bought cranberry sauce to bring a sweet-tart balance to the richness of the brie.
- Brie cheese: A soft, mild cheese that melts beautifully and adds a creamy, indulgent layer to the sandwich.

👩🏻🍳 Recipe FAQs
Yes, deli turkey works well if you don’t have roasted turkey slices on hand. Opt for high-quality, thick-cut slices to give the sandwich a heartier texture.
Make sure to use a hearty bread and grill the sandwich to crisp the outside. You can also use less brie if you’re concerned about too much moisture.
While it’s best warm, you can enjoy it cold if you're on the go or prefer a cold sandwich. Just make sure the brie is sliced thinly to avoid it being too firm.
🍽 Serving ideas
Serve this sandwich with a side of arugula and pear salad or a warm bowl of pumpkin soup for a full, comforting meal.
You can also pair it with whipped sweet potatoes for an extra indulgent treat.
If you’re hosting a holiday brunch or lunch, cut the sandwiches into smaller, bite-sized portions and serve them as appetizers.
🍷 🥂 Wine pairings
This tart and tangy sandwich goes well with both white wine and red wine. My two wine pairing suggestions:
- Pinot Noir: A light-bodied red wine with earthy and fruity notes that complement the turkey and cranberry sauce without overpowering the brie.
- Chardonnay: For white wine lovers, a lightly oaked Chardonnay works beautifully, offering buttery richness that pairs well with the creamy brie and turkey.

Turkey Cranberry Brie Sandwich
Equipment
Ingredients
- 4 slices of bread
- 6 slices of brie
- 6 slices of turkey breast
- ½ cup cranberry sauce
- 2-3 Tablespoons unsalted butter, softened
Instructions
- Heat a large skillet over medium heat.
- Spread butter on one side of each piece of bread. On the unbuttered side of one slice, top with three slices of brie, then ¼ cup cranberry sauce, then 3 slices of turkey breast. Top with another slice of bread, with the buttered side on the outside.
- Repeat with the remaining ingredients to create a second sandwich.
- Add one sandwich to the skillet and gently press down on top of the sandwich using a burger press or large spatula. Cook for about 1-2 minutes, just until the bottom gets nicely cooked.
- Carefully flip the sandwich, cover again, and cook for another 1-2 minutes. Again, just until the bottom bread gets nicely browned and the cheese is melty.
- Slice in half. Repeat cooking steps with the second sandwich.
Notes
- Cranberry sauce: drain excess liquid. If your sauce has too much liquid, it could make the sandwich soggy.
- Turkey breast: If using thicker slices of leftover turkey breast, you might only want to use 2 slices of turkey breast per sandwich (for 4 total slices). If using thinner slices of deli turkey breast, use 3-4 slices per sandwich (6-8 total slices).
- Brie: You can use more or less brie to suit your personal taste preference. I prefer to slice the brie thinly (about ¼" thick) and use 3-4 slices of brie per sandwich.
