Spread butter on one side of each piece of bread. On the unbuttered side of one slice, top with three slices of brie, then ¼ cup cranberry sauce, then 3 slices of turkey breast. Top with another slice of bread, with the buttered side on the outside.
Repeat with the remaining ingredients to create a second sandwich.
Add one sandwich to the skillet and gently press down on top of the sandwich using a burger press or large spatula. Cook for about 1-2 minutes, just until the bottom gets nicely cooked.
Carefully flip the sandwich, cover again, and cook for another 1-2 minutes. Again, just until the bottom bread gets nicely browned and the cheese is melty.
Slice in half. Repeat cooking steps with the second sandwich.

Cranberry sauce: drain excess liquid. If your sauce has too much liquid, it could make the sandwich soggy.
Turkey breast: If using thicker slices of leftover turkey breast, you might only want to use 2 slices of turkey breast per sandwich (for 4 total slices). If using thinner slices of deli turkey breast, use 3-4 slices per sandwich (6-8 total slices).
Brie: You can use more or less brie to suit your personal taste preference. I prefer to slice the brie thinly (about ¼" thick) and use 3-4 slices of brie per sandwich.
