- Breakfast sausage - I love using ground breakfast sausage because it is usually slightly pre-seasoned and has really rich flavor. You could also use plain ground pork sausage, Italian sausage, or ground turkey sausage. If you get the sausage formed in casings, be sure to remove the casings and just use the ground meat part.
- Potatoes - The best options for this dish are russet potatoes, but you could use sweet potatoes, red potatoes, or yukon gold potatoes. Be sure to dice the potatoes into small pieces that are about the same size for even cooking.
- Olive oil - Use your favorite olive oil or other cooking oil.
- Onions & garlic - Diced onions and fresh minced garlic add big flavor to the potatoes and sausage. I prefer using yellow onions or shallots, but you could also use finely diced or sliced red onion if you prefer a bit more of a sharper flavor. It's a personal preference.
- Rosemary - A little chopped fresh parsley adds some depth of herbaceous flavor to these sausage potatoes.

- Start by soaking the diced potatoes in a bowl of cold water. This helps release the starches and makes them crisp up nicely in the pan. After about 20-30 minutes, drain the water and dry the potatoes with a paper towel.
2. While the potatoes are soaking in the cold water, you can season the potatoes. Add diced potatoes to a separate bowl and add one tablespoon of the olive oil, along with the paprika, rosemary, salt, and pepper. Toss to coat the potatoes.
3. Add olive oil to a cast iron skillet or other heavy-bottomed skillet over medium-high heat.
4. Add the breakfast sausage to the hot skillet and cook, breaking up with a wooden spoon or meat chopper.
5. Add the onions and garlic. Cook just until the onions and garlic are softened and fragrant.
6. Then transfer the meat mixture to a bowl and set aside.
7. If there's a lot of grease in the pan, you should drain some of the grease, until there's just about one tablespoon left in the pan. Then add the seasoned potatoes. Stirring constantly, cook the potatoes for a few minutes, just until the outsides become slightly crispy.
8. Return the meat misture back to the pan.
9. Toss ingredients together and continue cooking for a few minutes.

- 1 pound Russet potatoes, peeled and diced into small cubes (about 3 to 3½ cups of diced potatoes)
- 2 Tablespoons olive oil, divided (plus more if needed)
- ½ teaspoon thyme
- ½ teaspoon paprika
- ¼ teaspoon ground black pepper
- ½ teaspoon kosher salt
- 1 pound ground breakfast sausage
- ½ cup diced onion
- 2 garlic cloves, minced
- 1 Tablespoon chopped fresh parsley, for garnish

Instructions
- 1. Place the peeled and diced potatoes into a large bowl filled with cold water. Set aside.
- In a separate large bowl, whisk together 1 tablespoon of olive oil, thyme, paprika, salt, and pepper.
- Drain the potatoes and dry with a paper towel. Add potatoes to the olive oil and spices mixture and toss to coat. Set aside.
- In a large cast iron skillet over medium-high heat, add the remaining tablespoon of olive oil.
- Once the oil is heated up, add the ground sausage. Stir and break apart the sausage as it cooks for about 3 to 4 minutes, just until all of the sausage has browned.
- Once the sausage has browned, add the onions and garlic. Stir together and cook for about 1 minute, just until the onions and garlic are soft and fragrant. Then remove and transfer the sausage mixture to a bowl and set aside.
- Add the potatoes to the skillet and cook, stirring regularly to keep the potatoes from sticking to the pan. Cook until the potatoes are to your preferred crispness on the outside and until they are cooked through and fork tender inside. This can take anywhere from 5 to 10 minutes.
- Return the seasoned meat with onions and garlic to the skillet. Stir together with the potatoes and cooks together for about 2 minutes.
- Garnish with chopped fresh parsley. And serve topped with fried eggs, if desired.
