    Beer and Food Pairings on KGW's Portland Today

    Before we get to the recipe for these super awesome crazy addictive Slow Cooker Pulled Pork Nachos, let's talk beer and football party food.

    On Monday, before the National Football Championship, I had the opportunity to share some quick tips for beer and food pairings on our local NBC station's Portland Today show.

    Check it out:

    Basically, I pair beer with food in a similar way that I pair wine with food.

    Light beers (lagers, pilsners, ciders): pair with light appetizers, light cheeses, guacamole & chips, spicy chicken wings.

    Medium beers (IPAs, amber ales): pair with most typical football fare, such as pizzas, wings, and ribs that have been grilled or slow cooked.

    Dark beers (stouts, porters): pair with chocolate desserts, or really hearty food like smoked ribs.

    When in doubt, serve a couple of IPAs at your game day tailgating/homegating party. Medium-bodied ales go with most foods. The bright acidity in ales tends to balance out the richness of football food such as hot wings, and also does a nice job of soaking up the oiliness of pizza.

    Okay, now that we've got the beer figured out, it's on to the main event of this post: the fully loaded, ridiculously yummy NACHOS!!

    Slow Cooker Pulled Pork Nachos

    I love these nachos. More importantly, most people who attended a recent NFL party at my house LOVED these nachos.

    They've got something for everyone: crispy tortilla chips, hearty and tender pulled pork done in the slow cooker and finished with our homemade BBQ Sauce, bright herbs, and a little bit of saltiness from the black olives.

    Now, you can see from these pics that this time, I left out the cheese. However, for FULLY loaded nachos, I've included directions on when and how to incorporate shredded cheddar cheese (or, I use dairy-free Daiya cheese shreds).

    And don't forget the side of salsa and sour cream.

    Slow Cooker Pulled Pork Nachos are loaded with yummy ingredients. Perfect for Game Day, a family BBQ, potlucks, picnics, or any night!

    Ingredients

    Slow Cooker Pulled Pork

    • 1 medium onion sliced
    • 2 garlic cloves minced
    • 1 cup chicken broth
    • 1 tablespoons packed light brown sugar
    • 2 teaspoons chili powder
    • ½ teaspoon ground cumin
    • ¼ teaspoon ground cinnamon
    • ½ teaspoon salt
    • 1 2-3 pound boneless pork shoulder, cut into cubes
    • 2 cups BBQ sauce we use our homemade BBQ sauce but you can use your fave sauce

    Nachos

    • 1 bag of tortilla chips we love Juanitas brand tortilla chips!
    • 1 6- ounce can of sliced black olives
    • ¼ cup finely diced red onion
    • 1 tablespoon finely chopped green onions
    • Optional: 1 6-ounce can diced jalapeños
    • Optional: 1 cup shredded sharp cheddar cheese or Daiya dairy-free shredded "cheese"
    • Garnish: 2 tablespoons chopped cilantro OR chopped parsley

    Instructions

    Make the Slow Cooker Pulled Pork

    • Lay out the onions and garlic evenly throughout the bottom of the slow cooker.
    • Pour the chicken broth into the slow cooker.
    • In a small bowl, combine the brown sugar, chili powder, cumin, cinnamon, and salt until fully blended.
    • Rub spice blend all over the pork cubes, then place the pork on top of the onions and garlic in the slow cooker.
    • Cook on high for 5-7 hours, or on low for 7-9 hours.
    • When the pork is cooked it will come apart fairly easily with two forks. Turn off the slow cooker, and slowly drain out the liquids over a strainer in a sink.
    • Using two forks, pull apart the pork in the slow cooker until all of the pork is shredded.
    • Pour our homemade BBQ sauce or the BBQ sauce of your choice over the pork and mix together until all of the pork is fully coated. Add more sauce as needed.

    Assemble the nachos

    • Preheat oven to 325 degrees.
    • On an oven-safe large platter or a rimmed baking sheet, spread out the tortilla chips into one layer, with chips overlapping.
    • Take spoonfuls of the BBQ pulled pork and use either a spoon and fork or nature's best kitchen tools - your (washed, clean, possibly gloved) hands! - to spread evenly over the tortilla chips.
    • Sprinkle red onions evenly over the nachos, then sprinkle the black olives and the green onions. If you are using diced jalapeños, now is the time to add those to the mix.
    • Then, if you'd like, top with cheddar cheese or a dairy-free cheese alternative.
    • Place oven-safe platter or rimmed baking sheet of nachos into the oven for just a couple of minutes, just until the cheese melts. Remove from the oven and garnish with chopped cilantro or chopped parsley.
    • Serve immediately with a side of salsa and sour cream.
    • Eat up!

        These look so yummy! I love pulled pork and I love nachos... so these are perfect! My boyfriend doesn't eat dairy so it's good to know that these are just as good without cheese (or for some lol!) And you may have inspired me to make this pulled pork this weekend... I love slow cooker meats on the weekends! Leftovers are always great for work lunches!
