- Thaw refrigerated puff pastry, then cut into four equal squares. Place on a parchment paper-lined baking sheet.
- Using oven-safe ramekins, you can either:
- a: place one ramekin on top of the center of each square, then bake at 400°F for 6-8 minutes, or
- b: bake them as is for 6-8 minutes, remove from the oven, and then immediately place an oven-proof ramekin on top of the center of each of the squares. Press down gently to create a little dent.
2c: If you choose option B, then once the puff pastry squares are done baking, immediately press down gently on the center of each square with the botto of a ramekin. This creates an indentation in the center that will hold the egg filling better.
If you placed oven-safe ramekins on top of the squares then baked them, remove them and set them aside.
3. Sprinkle shredded cheddar cheese over the center of each square.
4. Crack one egg into a small bowl, then carefully lower the egg over the center of the cheese-topped puff pastry squares.
5. and 6. Bake for an additional 12-15 minutes, until the edges are golden brown.
7. Sprinkle grated parmesan cheese over each puff pastry square.
8. Season with salt and pepper.
9. Garnish with chopped fresh parsley.
