    And then there's the kind of fruit turnover you find at your local bakery. Huge. The dough is puffed up to crispy buttery perfection. The filling is made with fresh fruit, oozing with super flavorful, bright fruit flavors.

    Now you can have bakery-style fruit turnovers at home, baked from scratch in your air fryer! These homemade Strawberry Turnovers are SO delicious that you'll want to make another batch. Like, right away!

    These sweet strawberry puff pastry turnovers are truly as good as (if not better than!) the kind you'll find at your local bakery.

    • You can make this with just FIVE ingredients that are common and easy to find at any grocery store
    • From start to finish, you can make these yummy pastries in about 30 minutes.
    • You can use fresh strawberries or frozen ones.
    • These are made in your air fryer, creating a flaky puff pastry all around and making clean up a breeze!
    • The icing is totally optional. But trust me: the icing adds a whole extra level of YUM to these turnovers!
    • These are freezer friendly!

    👩🏽‍🍳 Ingredients to make strawberry turnovers

    Puff pastry dough - You'll need one package of store-bought puff pastry dough. Each package usually comes with two sheets of puff pastry.

    Strawberries - Use fresh or frozen strawberries. If you're using frozen, be sure to measure out the strawberries then thaw them out at room temperature before using.

    Sugar - Granulated sugar helps add to and bring out the natural sweetness of the strawberries.

    Vanilla extract - You will love the rich depth of flavor that the vanilla adds to the homemade strawberry filling.

    Egg wash - Combine one beaten egg with one tablespoon of water to create the egg wash that coats the pastry before baking. This is what gives the pastry that gorgeous golden crispy glow when it bakes!

    OPTIONAL: Icing - You can drizzle a classic pastry icing glaze over the turnovers if you wish.

    ✅ Step-by-step instructions

    Exact measurements of ingredients and instructions for these homemade strawberry turnovers are in the printable recipe card toward the bottom of this post. Here are some helpful tips to guide you as you make this delicious recipe.

    1. In a medium pot, add the strawberries, sugar, and vanilla.

    2. Stir together and simmer on low to medium heat for 10 minutes. Remove from the stove and allow to cool completely.

    3. In the meantime, roll out two puff pastry sheets. With a sharp knife, cut out 4 equal squares, for a total of 8 squares.

    4. Add one tablespoon of the fresh strawberry filling to the center of each square. Dip your fingers in a little water and wet the edges of each square. Fold one corner of a square to the other to form a triangle, then press the sides together. Fold dough for all squares until you have 8 triangles.

    5. Use the tines of a fork to press down around the edges to further seal the edges of each triangle together.

    6. Combine the egg and remaining water in a small bowl and whisk together to create an egg wash. Use a pastry brush to brush egg wash over the tops of each triangle.

    7. Spray the interior of your air fryer with non-aerosol avocado oil spray. Place the prepared turnover triangles onto a piece of parchment paper in the air fryer basket or tray(s) in a single layer. Depending on the size of your air fryer, you may need to work in batches.

    8. Air fry at 400°F for 15 to 18 minutes, until the tops of the turnovers and edges are golden brown and the puff pastry is cooked through. Garnish with additional sliced strawberries, if desired.

    9. Drizze with icing, if desired.

    ⭐️ Make the optional icing glaze

    In a large bowl or glass measuring cup with spout, combine 1 ½ cups powdered sugar with 3 to 5 tablespoons of milk (start with 3 and work up to 5 tablespoons if necessary) and ½ teaspoon of vanilla. Whisk together. Add more powdered sugar if you want it to be thicker; add more milk if you want the glaze to be thinner. Drizzle over the top of each turnover and allow the icing glaze to set.

    Can I bake these turnovers in the oven instead of the air fryer?

    Yes! Preheat your oven to 375°F, make the strawberry turnovers according to the directions in the recipe card, then instead of air frying, place on a large baking sheet lined with parchment paper and bake for 15 to 20 minutes, until the pastries are golden brown.

    Can I make these turnovers with other fruit?

    Definitely! This air fryer fruit turnover recipe is amazing with blueberries, raspberries, blackberries, or peaches. They're also delicious when made with my Freezer Apple Pie Filling!

    Can I freeze leftover strawberry turnovers?

    Absolutely! Make the full strawberry turnovers recipe, then make sure you allow the turnovers to cool down to room temperature. Once cool, place in a freezer-friendly airtight container or resealeable freezer bag and freeze for up to one month.

    When you're ready to eat one, take it out of the freezer and thaw in the refrigerator overnight. Then air fry at 350°F for 5 minutes or until the pastry is warmed through to your liking.

    🥣 Kitchen tools and equipment

    For this easy strawberry turnovers recipe, you just need a few basic kitchen tools:

    Cutting board and knife - You'll need a sturdy cutting board and sharp knife.

    Air fryer - I use my Ninja Foodi Deluxe XL Pressure Cooker in air crisp mode to make all of my air fryer breakfast recipes. You can use whatever air fryer you have!

    Parchment paper - Line your air fryer basket or tray with parchment paper to keep the pastries from sticking and to help catch any of the filling that might ooze out.

    Pastry Brush - Use a pastry brush to brush the outside of the formed pastries with egg wash before baking.

    These air fryer strawberry turnovers are super delicious on their own. But I also include an optional icing glaze that takes these pastries totally to next level.

    You can serve them with some additional sliced strawberries or even with some additional strawberry jam. They're also yummy with a simple fruit salad.

    Storage: Allow to cool completely. Then store in an airtight container or resealable plastic bag in the refrigerator for up to 5 days or freezer for up to one month.
    From the fridge: reheat in the air fryer for 2 to 3 minutes.
