Instructions
After grating the potatoes, add them to a large bowl with salt and pepper. Gently mix to combine.
Heat 1 Tablespoon olive oil plus 1 Tablespoon butter in a large non-stick skillet over medium heat.
Once the butter has is almost completely melted, add the potatoes and gently press down to create an even round disc.
Allow to cook, undisturbed, for about 10 minutes, or just until you see the bottom edges turning golden brown and crisp.
Wearing oven mitts, very carefully place a wooden cutting board or large oven safe plate over the skillet and in one solid movement, flip the potatoes over onto the covering plate or board. Set the plate/board with the potatoes aside.
Return the skillet to the stove over medium heat and add the remaining 1 Tablespoon olive oil and 1 Tablespoon butter to the pan.
Once the butter has almost melted, carefully slide the potatoes onto the skillet, trying to keep it together in one large round disc form.
Cook the potatoes over medium heat, undisturbed, for another 10 minutes or until the bottom edges turn a golden brown.
You can use a spatula to gently lift an edge of the rösti to see if the bottom is done to your liking. Once it looks crispy enough to you, turn off the heat and gently slide the entire potato rösti onto a large plate.
Slice and garnish with chopped parsley and serve warm. Season with more salt and pepper to taste as needed.

Makes approximately 4-6 servings.Additional ingredient mix-ins:
This recipe as is is dairy-free, but if you can tolerate/like dairy, you can add grated parmesan cheese or slices Gruyere cheese to the potato mixture before cooking.
Some people like to add cubed ham to the potato mixture before cooking.
Storage: store in an airtight container in the refrigerator for up to 4 days. Reheat on a skillet on the stove.
