Instructions
Preheat oven to 400 degrees.
Spiralize one large baking potato according to manufacturer directions.
Soak potatoes in a large bowl of water for at least 10 minutes
Drain potatoes and dry gently between two paper towels.
If you'd like shorter strands, cut potato strings to desired length.
Return potatoes to the large bowl. Add olive oil, melted bacon fat, salt, pepper, and paprika.Using your hands gently toss the potatoes and oil mix until well blended.
Spread potatoes evenly onto a baking sheet, taking care not to overcrowd the potatoes.
Sprinkle desired amount of sea salt over the entire baking sheet of potatoes.
Bake in the oven for 8 minutes. At 8 minutes, take them out and flip the potatoes over. Return to oven and bake for another 7-9 minutes.
Remove from oven and carefully transfer curly fries onto 3 layers of paper towels to soak up some of the oil. If desired, sprinkle chopped parsley over curly fries.
Serve immediately.
Notes
NOTE 1: You can double this recipe easily to make 4 side servings. NOTE 2: Watch the potatoes during the last half of the baking time very carefully! They go from looking somewhat done to DONE very quickly. Mine are done at 15 minutes, but my oven also cooks slightly faster than most. Yours should be done anywhere between 15 and 18 minutes, also depending on how crispy you like your curly fries. Enjoy!
