Optional toppings: mini dog biscuits or bacon crumbles
Instructions
Preheat oven to 375°F.
In a large bowl using a hand mixer, or in a stand mixer, whisk together the mashed banana, egg, peanut butter, and melted coconut oil.
Then mix in the flour, baking powder, and oats and whisk together just until combined. The mixture will be chunky.
Spoon the batter into the holes of 2 un-greased, non-stick donut pans, using your hands or the spoon to pat the batter down and filling each hole just about ¾ of the way full.
Bake at 375°F for 12 to 15 minutes, just until the tops are slightly golden brown.
Make the glaze
While the donuts are baking, make the glaze. In a large bowl, add the ½ cup peanut butter with the Tablespoon of coconut oil. Microwave for 15-20 seconds, just enough to soften the peanut butter and almost melt the coconut oil. Remove from the microwave and whisk together until fully combined and smooth.
When the donuts are done baking, dip each one into the glaze and then rest on a cooling rack. If desired, top with mini dog biscuits or bacon crumbles.
