Add oil to a large non-stick skillet. Add the longganisa sausages and cook for about 3-4 minutes on each side, until the longganisa is browned all around and fully cooked through. Transfer to a plate and set aside.
Break the eggs over the skillet and cook sunnyside up. Or, flip the eggs and cook until over easy, over medium, or over well -- whatever each person prefers. Transfer eggs to a plate.
Set out four plates and add a serving of Sinangag (Instant Pot Garlic Rice), one egg, and 2-3 longganisa sausages. Enjoy!
Notes
Rice: You can use any rice for Longsilog. We love serving this with Sinangag, using our easier, faster version: Instant Pot Garlic Rice. But you can also use jasmine rice, long grain white rice, or brown rice. Storage: store leftovers in an airtight container in the refrigerator for up to 3-4 days.
