Melt the white chocolate plus one teaspoon of coconut oil until melted and whisk until smooth.
Pour the melted white chocolate into the candy molds, just over halfway full.
Place one Oreo cookie into each mold, allowing the white chocolate to cover the tops of the cookies. Pour more chocolate if needed to fully cover the tops of the cookies. Refrigerate for 10 minutes.
While the cookies are setting, melt the red candy melts with one teaspoon of coconut oil in one bowl and the blue candy melts with one teaspoon of coconut oil in another bowl. Whisk each until smooth and place them into separate plastic frosting bags.
When the white chocolate covered Oreos are set, remove them from the refrigerator and from the molds, then place them on parchment paper.
Pipe the red and blue melted candy melts over the cookies in any pattern you wish.
Top with sprinkles.
Allow to set on the parchment paper and then enjoy.
