Fill a cocktail shaker with ice. Add lemon and simple syrup; shake well. Then pour into a medium saucepan.
Sprinkle the mixture with gelatin and allow to soak for 2 minutes. Then cook over low to medium, stirring constantly, until the gelatin is fully dissolved.
Remove from heat and stir in the champagne, vodka, and lemon lime soda. Pour into small plastic cups and chill in the refrigerator for several hours until set.
Garnish with edible gold glitter or sprinkles and serve.
