Peach Plum Summer Salad
This summer salad features fresh stone fruits and corn. Perfect for barbecues, picnics, and potlucks!

Ingredients

medium to large peaches, sliced or cut into 1" wedges
2
medium plums, sliced or cut into 1" wedges

tbsp
lemon juice
1
tbsp
red wine vinegar
2
cups
baby arugula (or chopped arugula)
1
cup
cooked corn
drizzle
extra virgin olive oil
kosher salt and ground black pepper, to taste
Instructions
In a large bowl, mix together sliced or cut fruit with lemon juice and red wine vinegar.
Toss in arugula and corn.
Drizzle with olive oil and season with kosher salt and black pepper.
