Remove the chicken, deglaze the pot with a little chicken broth, then add the chicken back with the soy sauce, onions, garlic, vinegar, sugar, remaining broth, bay leaf

Pressure cook on HI for 9 minutes. Then sauté and allow the sauce to thicken up to your liking before turning off the Instant Pot and serving.
